November was an extremely busy month at the winery, with hundreds of new visitors coming to the tasting room for the Uncork York “Wine Just off the Vine” event and 2 great wine dinners featuring Hummingbird Ridge wines at Back Woods Grill in Etters & Yorktowne Hotel in York. And the excitement continues in December because, believe it or not, it's Hummingbird Ridge Winery’s 1 Year Anniversary. Wow, time has flown by in the last year. The Winery opened for business on Saturday, December 5, 2009 and it’s time to celebrate being open for 1 year. And to Thank all of you who have supported us over the last year, we invite you to stop by on Sat., Dec. 4th & Sun., Dec. 5th for a Special Celebration, featuring Delicious food and wine samples, and Special wine deals.

- Back Woods Grill in Etters will be featuring Hummingbird Ridge wines in a Holiday Wine Dinner this month on Tuesday, Dec. 14th. If you missed it last month, here’s your chance to partake in some amazing cuisine prepared by the talented chefs at BackWoods Grill. This event would also make a great gift for that someone special or a great idea for your company Holiday Party. 5 Gourmet Courses paired with 5 Hummingbird Ridge wines. - Recipe of the Month: This month’s recipe is a unique, flavorful and easy Holiday Party drink recipe made with Hummingbird Ridge Winery’s “Hummingbird White” wine. We have been featuring this Warm Holiday Cider Wine recipe at the tasting room for the Holidays and everyone has just loved it! And it’s sooooooooo easy!

In a crockpot or coffee warmer, mix half “Hummingbird White” wine and half Apple Cider (our friends at Triple A Acres make the best fresh apple cider! You can find them at the Newberrytown Peddlers Market [our neighbors] on Saturdays & Sundays). Warm it up and ENJOY!!! It’s that simple, and your holiday guests will think that you slaved for hours preparing it. Optional: Add cinnamon stick or spice bag to your taste.

- Wine Question of the Month: Why is wine with little or no sugar content called “dry wine”? We get asked this question a lot at the tasting room and the origin of the term “dry wine” is unfortunately, not easy to explain. In researching the question, the best answer that we can find is the following from a Word Origins Discussion Board: "In medieval times (and pretty much up to the advent of modern winemaking), wines were typically drank young, since it was difficult to keep them from spoiling. Any aging that was done would have been done in wooden barrels, since the bottle- and cork-making techniques of the time weren't good enough to permit long-term storage in the bottle. (The ancient Romans and Greeks had airtight containers for storage, but these methods were lost during the dark ages.) So although it's possible to age the astringency out of modern wines, in medieval times there would have been a tradeoff between sweetness and astringency. As a general rule, non-sweet wines would have been more astringent ('dry' in the mouth) and sweet wines less so. From this, it's not surprising that 'sweet' and 'dry' would have come to be regarded as opposites in wine, and that non-sweet wines would continue to be called 'dry' even when improved methods of winemaking led to the production of non-sweet wines that weren't particularly astringent.

Wow. We had some beautiful weekends in October and we had a lot of visitors stop in to taste. The new wines are fermenting now and starting their journey from grapes to delicious wine. - Our Newest Release is a new Port-style wine called “Blue Diamond”. Quite a following has developed for our port-style wines. This newest one is a beautiful peach blush color and features floral aromas, with delicate pear and berry flavors. Stop by to try this New Release! Also, stop in for our warmed apple white wine to take the chill off.

- Also continuing this month at the winery, Camp Hill wildlife photographer Melissa Earnshaw will be exhibiting her amazing artwork. If you are a fan of wolves (her specialty) or other wildlife, come and see her spectacular photographs!

- Recipe of the Month: This month’s recipe celebrates Autumn and is for all of you dessert-lovers out there. This Pumpkin Bundt Cake is so moist and delicious, you won’t be able to stop at just one piece:
Ingredients:
1 cup vegetable oil or Canola Oil, 3 eggs, 1 can (15-oz. size) pumpkin, 1 teaspoon vanilla extract, 2 cups white sugar, 2 1/2 cups all purpose flour, 1 teaspoon baking soda, 1 teaspoon ground nutmeg, 1 teaspoon ground allspice, 1 teaspoon ground cinnamon, 1 teaspoon ground cloves, 1/2 teaspoon salt, 1/2 cup chopped nuts (0ptional)

Directions: Preheat oven to 350 degrees. Grease one 10 inch Bundt or tube pan. Cream oil, beaten eggs, pumpkin and vanilla together.

Sift the flour, sugar, baking soda, ground nutmeg, ground allspice, ground cinnamon, ground cloves and salt together. Add the flour mixture to the pumpkin mixture and mix until just combined. If desired, stir in some chopped nuts. Pour batter into the prepared pan.

Bake at 350degrees for 1 hour or until a toothpick inserted in the middle comes out clean. Let cake cool in pan for 5 minutes then turn out onto a plate. Let cool and dust with powdered sugar. (Or, frost with cream cheese frosting or a powdered sugar glaze). This goes great with Hummingbird Ridge “Sweet Dreams” wine. ENJOY!!!

- Winetasting Tip of the Month: If you can never seem to find a dry red wine that you like, maybe you are not giving your reds enough of a chance to show themselves at their best. Remember that many red wines need to be exposed to air and allowed to “breathe” a bit before they become their best, especially if they are newer vintages. Just letting the wine sit in your glass (or decanting the wine into a decanter or glass pitcher) for as little as 30 minutes allows the alcohol aromas to “blow off” and also starts a reaction that softens and smooths the tannins and “unwinds” the tightly bound flavors in red wines. So give your red wine a chance to show itself at its best and “let it breathe”!

- It's often hard to pair Holiday meals such as Thanksgiving with wine, not just because of the variety of foods presented, but also because of the variety of people at the table. Trying to please a variety of people can be hard, but here is a possible solution. Present several wines at the table in different styles that guests can choose from. A nice sparkling wine is always nice, as well as a fruit-forward dry red, and perhaps a semi-dry white and of course, a sweet wine for those that are not big wine drinkers. Fortunately, Hummingbird Ridge Winery is your one-stop shop for Thanksgiving wines. From our Hummingbird Red & Semi-Dry Riesling on the drier side to our Sweet Dreams & Ruby Elixir on the sweeter side, you can present your guests with the perfect wine for your Thanksgiving celebration. Stop in our tasting room for more advice on pairing wines with Thanksgiving dinner or any meal.

The Fall is upon us and new wines are already fermenting in the tanks as the harvest this year is one of the earliest in recent memory. Many experts are saying that the 2010 vintage in the northeast could be one of the best in many years! Our September Port Month Celebration was a big success with many visitors enjoying our new Pordevino (Red) and Pordeblanco (White) port-style wines. We also had a great turnout for our first on-site winery charity event last Friday & Saturday that benefited the American Cancer Society. Thank You to everyone who came out!!!

- Our next major event coming up is our “Wine Off The Vine” Wine Dinner at the elegant Yorktowne Hotel in York on Friday, November 19th at 6pm. This wine dinner will feature 5 courses created by Yorktowne Hotel’s award-winning chef Mark Pawlowski, with each course paired with a delicious wine from York County’s own Hummingbird Ridge Winery, Central PA’s Newest Winery! This will be a fabulous dinner where you can discuss the wines, wine tasting, and winemaking with Hummingbird Ridge Winery winemaker! - October is “Ruby Is Back” month at Hummingbird Ridge Winery. In the 10 months since we opened, one wine has sold above all the others and has developed a large fanbase - Ruby Elixir!!! After several months off the shelves, Ruby is Back! For those new to Ruby, it is our playful red wine that begs to be taken to a party or anywhere there are good times and good friends. Stop in and have a taste.

- Also this month at the winery, wildlife photographer Melissa Earnshaw will be exhibiting her stunning photography. Stop by and see this fabulous exhibit!

- Recipe of the Month: This month's Recipe is a simple but flavorful way to prepare chicken - Garlic Riesling Chicken. 1 1/4 pounds skinless boneless chicken thighs (salt & pepper to taste), 1 Tblspn olive oil, 1 head garlic (cloves separated & peeled), 1/2 cup Hummingbird Ridge Semi-dry Riesling, 1/2 cup chicken broth

Season chicken with salt and pepper; In a large skillet over medium-high heat, heat oil; Add chicken thighs and brown on all sides, about 10 minutes. Place chicken in a slow cooker and add remaining ingredients. Cook on medium setting for 3.5 hours. Serve chicken with the garlic Riesling broth. Pair this with, of course, Hummingbird Ridge Semi-Dry Riesling. Enjoy!!!


- Winetasting Tip of the Month: We have had some questions from newer wine drinkers about reviewing the standard process for tasting wines in a critical manor. The following steps will allow you to critically evaluate wine:
Sight - hold the wine up to light, examine for clarity, brilliance, and depth of color; should not be cloudy; most commercial wines are filtered; white wines gain color as they age, red wines lose color and “brown” as they age.
Swirl - swirl the glass to expose wine to a larger surface area and release aromas. Smell - smell the wine; put your nose into the glass & inhale slowly and deeply; note the aromas; swirl again and smell again before drinking; wine flaw odors include Sulfur, Chemical, or Musty smells. Cork taint is a wet newspaper or musty smell.
Slurp - slurp some wine into your mouth, which aerates the wine and breaks up the molecules allowing the flavors and more aromas to be released.
Swish - swish the wine around in your mouth and allow the wine to coat every part of your mouth, and BEFORE you swallow the wine, close your eyes, focus your concentration on what you are tasting and note the flavors, sweetness, acidity, tartness, softness of the mouthfeel, and tannins (if it's a red wine). Is the wine light bodied or full-bodied (light or heavy on the tongue). Also note any unpleasant tastes.
Swallow - note the length of the finish (how long does the taste remain after you swallow).
Savor - think about your overall impression of the wine, were the components balanced, were there any "off 'tastes", would you drink this wine again, write notes.


- Many of you have suggested that we have more signs out so that people know where we are located. Well, we have listened to your suggestions and Hummingbird Ridge Winery will soon be on a billboard located along Interstate 83 Southbound, just after the Lewisberry Exit. Now that’s a Big Sign!

We’re heading out of summer now and Harvest Season is rapidly upon us. Things start picking up at the winery as we plan for the new wines that we will be working on. We have some Special Events coming up at the winery, including a wine, dine and art benefit for Relay For Life and the American Cancer Society October 1st and 2nd. Enjoy 4 courses of appetizers and light entrée’s, each paired with a specially chosen Hummingbird Ridge Wine, plus local photographer Melissa Earnshaw will be displaying her photography. All for just $25 per person to benefit the American Cancer Society. There are 2 sessions at 6pm and 7:30pm on both Friday, October 1st and Saturday, October 2nd. Tickets can be purchased at Hummingbird Ridge Winery or call Judy at 717-515-4268 for more information. Space is limited so get your tickets early. Come on out for Great Food, Great Wine, and Great Art for a Great Cause!!!

- Our new port-style white wine, PORDEBLANCO, has been released.
PORDEBLANCO is a white port-style wine made from the Riesling grape featuring delicate layers of citrus flavors of lemon, orange and tangerine for a truly unique and delicious fortified wine. This wine is a truly unique taste experience and is getting Excellent Reviews from Customers – You have to Taste it to Believe it!!! And to Celebrate both of our New Port-Style Wines, September is "Port" Month at Hummingbird Ridge Winery, with Free Tastings of Pordevino & Pordeblanco all month & Discounts on Selected Wines.

- Thank You to everyone who came to the winery for the August 14th attempt by PA wineries to break the Guinness World Record for the World's Largest Wine Toast. We did not break the record, but we had a lot of fun and we raised funds for Mario Andretti's Childrens & Youth Charity & we raised awareness of the Pennsylvania wine industry.

- Hummingbird Ridge Winery had some nice press recently with an article in the Harrisburg Patriot News:

"Tom Day, the winemaker who opened Hummingbird Ridge Winery in December, said some people are intimidated by wine. He thinks that's too bad. Day said he wants all sorts of people to enjoy wine, and he makes wines that appeal to the palates of the people living in the area. A lot folks who don't think they're wine people visit his winery, taste the wine and buy it.


Hummingbird Ridge wine is served at restaurants such as the Silver Lake Inn in Lewisberry, Culhane's Steak House in Fairview Twp. and Two Brothers Italian Grill in Newberry Twp (and Back Woods Grill in Etters & Hillside Cafe in Fairview Twp. -ed.)


All of which is quite an accomplishment for a vintner who put out his shingle only a few months ago. But Day, who is 45, said he has been making wine for a long time and his wines have been competition winners." - Recipe of the Month: This month's Recipe is Hummingbird Cake (No, it's not made with hummingbirds). The origin of this moist and delicious cake is a mystery but, according to Southern Living magazine, the first appearance of this recipe was in it's magazine as submitted by a reader in 1978. This cake pairs well with our 2 new port-style wines, "PORDEVINO" & "PORDEBLANCO". Enjoy!!!

"Hummingbird Cake"

3 cups all-pupose flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 eggs, beaten
1 1/2 cups cooking oil
1 1/2 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple, undrained
2 cups chopped pecans or walnuts, divided
2 cups chopped bananas

Combine dry ingredients in a large mixing bowl; add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup chopped pecans, and bananas. Spoon batter into a well-greased 9-inch cakepan. Bake at 350 degrees F. For 25 to 30 minutes.
And as your guests are eating up every last crumb, remember to tell them that "No hummingbirds were harmed in the making of this cake".

- Winetasting Tip of the Month: Here’s a simple little trick that will help you to focus your sense of smell and taste while you are tasting wines. It is important to focus your senses because experts say that up to 80% of what we taste is actually derived from our sense of smell. After you swirl and sniff and take a sip of the wine and use the "slurp method" we detailed in last month's newsletter, close your eyes and focus on the aroma and taste. Closing off your sense of sight will open up your other senses and help you to focus more intensely. Just don’t lose your balance and fall over.

Wow!!! July really brought the heat this year! Nothing like some cold Hummingbird Ridge wine to cool you down! And our new A/C system in the winery will keep you cool when you stop in for a tasting or to sip on a cool glass of Hummingbird Ridge wine!


Our new Port-style red wine, which is called PORDEVINO (we can't call it Port because "Port" is an internationally trademarked name), is flying off the shelves!!! Thank You to everyone who has come in to taste it and purchase it! Pordevino is truly a delicious treat for your tastebuds. And we hope to have Pordevino’s sister wine, PORDEBLANCO (port-style white wine) released this month. PORDEBLANCO is a white port-style wine made from the Riesling grape with layers of citrus flavors like lemon and tangerine for a truly unique and delicious fortified wine.


- Our new Hummingbird Ridge Winery Logo regular and stemless Wine Glasses seem to be a big hit with customers and they are very affordable at $3.95 for stemmed glasses and $4.95 for our unique stemless glasses (which are great for serving our port-style wines).


- Also, we are completely reserved for the August 14th attempt by PA wineries to break the Guinness World Record for the World's Largest Wine Toast. Pennsylvania wineries will attempt to break this record by simultaneously doing a toast on August 14th. We will be open from 11am to 2pm on Saturday, August 14th, but we will be closed from 2pm on for the toast as we are already at full capacity and can not accept any more reservations.


- Recipe of the Month: Over this hot summer, we have been serving our own White Sangria, featuring our "Hummingbird White" wine. It's easy and refreshing!

Pour 1 bottle of Hummingbird White into a pitcher. Cut 1 lemon, 1 lime, and 1 orange into wedges and add to the wine. Just before serving (so that it doesn't go flat), add 2 cups of lemon-lime soda (Sprite, 7up, etc.) to the pitcher. Stir, Pour into ice-filled glasses, top with a sprig of mint, and Enjoy!!!!! Don't be afraid to experiment by adding other fruit or a little sugar if you like it sweeter. Actually, my favorite part is eating the wine-soaked fruit when the Sangria is all gone!!!


- Winetasting Tip of the Month: To take your winetasting experience to a whole new level, learn the Slurp Method that professional wine judges use. When tasting wine, slurp a small amount through your lips and teeth. Then re-slurp (is that even a word?) the sip through your lips and teeth several times. This opens up the wine and allows the flavors to come alive. It takes a little bit of practice, and you'll probably have wine drooled all over yourself (and others) on the first couple of tries, but it really opens up the flavors!

We have some Exciting News this month!!! Our new Port-style wine, which is called PORDEVINO (we can't call it Port because "Port" is an internationally trademarked name), has now been released!!! We're not ones to toot our own horns a lot but we have to say, This Wine is Soooo Soooo Delicious!!!

In case you don't know what Port wine is, it is a dessert wine that is fortified so that it has a bit higher alcohol content than table wine. Our red wine PORDEVINO dances across your tongue with delicious multi-layered flavors of blueberry, blackberry, cherry and even hints of strawberry. We are so proud of this wine and we hope that you will stop in to try it. And just as exciting is the new white Port-style wine that we are working on that we hope to release within the next month.

- And our new Hummingbird Ridge Winery Logo Wine Glasses are now in and available for purchase! We have regular and stemless wine glasses available.

- Also, we are getting ready to participate in trying to break the Guinness World Record for the World's Largest Wine Toast. Pennsylvania wineries will attempt to break this record by simultaneously doing a toast on August 14th. The current record for the world’s largest wine tasting at multiple venues is 17,540 people, set at more than 400 pubs across the United Kingdom on May 21, 2008.

The Toastmaster for the August 14th Toast will be a man who knows a thing or two about speed and wine – auto racing legend, Mario Andretti. The toast will be delivered simultaneously via video to all participating wineries. We will announce more information soon.
Mario Andretti will also be autographing a bottle of our new PORDEVINO for us to auction and raise money for charity.

All charitable proceeds from the Great Pennsylvania Wine Toast will benefit The Fund to Benefit Children & Youth (http://www.fundforkids.org/ ), whose mission is to provide abused, neglected and at-risk children with the items and services they cannot receive from traditional sources.

- Speaking of worthy charitable causes, Our friend Erin Duffy is the organizer of the Duffy Motorcycle Poker Run (in memory Erin's father and our friend John Duffy). This will benefit Angelina Soriano, a local 8 year old girl who has Leukemia. It is happening on July 17th, The starting point is at Alpine Inn off the Lewisberry exit of Interstate 83. Welcome to Summer!!! It’s that time of year when folks load up the car and head out on vacation and we know that lots of folks visit the Central PA area with it’s major entertainment and historic attractions like HersheyPark, Gettysburg, and yes, now Central PA’s newest winery, Hummingbird Ridge Winery! So if you are going to be visiting the Central PA area (or if those of you who reside in Central PA see any visitors looking for things to do in the area), please put Hummingbird Ridge Winery on your list of “Places to Visit”. We are open for Free Tastings every Saturday and Sunday from 11am to 6pm and we would love to welcome you and share our wines with you. We are located just minutes off of Interstate 83, Newberrytown Exit 32 and it’s a nice drive through the country roads of Northern York County. Other happenings this month include:

- If you own a Harley-Davidson motorcycle like Hummingbird Ridge Winery owner Tom Day, then June is your month at Hummingbird Ridge Winery, with June being Harley-Davidson & Motorcyclist Appreciation Month at the winery. Free premium wine tastings and special discounts on selected wines will be offered every Saturday & Sunday in June. So we invite all motorcyclists to take a scenic ride and visit Hummingbird Ridge Winery! And we invite all who are joining in the Fox 43 Harley Ride through York County on June 26th to stop in at the winery!

- Remember we are a microwinery and we do small batch wines which helps us to keep a tight focus on every detail of the winemaking process and produce high-quality wines. But this also means that we are prone to sell out of these small batch wines at times, so visit often to see what’s new. - Ahhh, May is here, the flowers are blooming and the hummingbirds should be hovering at the feeders very soon! Ruby-throated Hummingbirds normally spend the winter in Central America. From March through May, ruby-throated hummingbirds migrate north, some through the eastern two thirds of Texas, some apparently through Cuba and Florida, and some apparently directly across the Gulf of Mexico. Birds reach the southern Gulf coast in late February and early March. Later migrants fly to breeding grounds further north. The farther north they are going the later they travel. Hummingbirds do not fly in groups but migrate individually and will follow the exact same route of their very first migration. Arrival time on the breeding grounds tends to not occur until food plants are blooming. Departure time also corresponds with the end of the blooming season for food plants. Ruby-throats usually arrive in PA in April and leave in late September. Just some quick info on our namesake.

- Now on to what is happening at Hummingbird Ridge Winery in May. May is our “Spring Fling” - Spring Open House Month, with special discounts on selected wines! So for all of those folks who have not discovered us yet, May is the perfect time to come out and visit us and taste our current wine selection and take advantage of our first wine sale of the year! Remember, Free Tastings every Saturday and Sunday in May from 11am to 6pm.

- Great News! "Sweet Dreams" is back! Our sweet white wine "Sweet Dreams" will be back in stock starting Saturday, May 8th!!! This wine is a great wine for sipping on the deck or taking to a picnic or for drinking with friends. Stop in and taste it.

APRIL 2010 NEWSLETTER

First, we send out a Huge Hummingbird Ridge Winery “Thank You” to everyone who visited the winery in March, especially the Uncork York Wine Trail “Tour de Tanks” event visitors. We met so many great people and made many new friends and received a lot of compliments about our wines. We thank you so much for visiting us and for purchasing Hummingbird Ridge wine!!!

It is now April and the weather looks like it’s going to cooperate and be nice and sunny and warm, at least for the start of April. Since we are a microwinery, we make small batches of wine so that we can focus on every detail of the winemaking process and make the best, most flavorful and balanced wines for you. But making small batches also means that we may sell out of certain wines at times and our wine lineup sometimes changes, so be sure to stop in and taste our latest offerings. We will be closed Easter Sunday April 4th, but we are open for free tastings all other Saturdays & Sundays in April from 11am to 6pm. Stop in and Experience the Flavor of Hummingbird Ridge wines!!! 

Our current lineup for April is: Hummingbird Red, our delicious dry red wine with ripe and juicy berry flavors; Hummingbird Red RESERVE, Beautifully Aromatic with Deep layered tones of soft Raspberry, Blackberry, and Plum into a full-flavored Finish; Semi-Dry Riesling, A fantastic expression of one of our favorite grapes with beautiful notes of citrus into a crisp long finish; Hummingbird White, a soft easy-drinking semi-dry white wine in a fruit-forward style, great with your favorite meal or just for sipping on the deck; and our best-selling Ruby Elixir, our playful semi-sweet red wine that begs to be taken to a party or a picnic or anywhere where there are fun people and good times.

We also have some winery building and grounds improvements in the works including work on an outside area where you can enjoy the outdoors while sipping a glass of wine, so stop by and see how the winery is progressing! Being only 4 months old, we are a work in progress, so there’s always something happening at Hummingbird Ridge Winery.

One more area restaurant, Two Brothers in Etters, is now carrying Hummingbird Ridge wines, along with these other fine area restaurants: Silver Lake Inn, Lewisberry; Back Woods Grill, Etters; The Field House, Etters; & Culhane’s Steak House, Lewisberry. We hope to see even more visitors in March for the Uncork York Wine Trail's "Tour de Tanks" event. Hummingbird Ridge Winery is a proud new member of the Uncork York Wine Trail, which is made up of 14 wineries in the Central PA region. The monthlong "Tour de Tanks" event gives the wineries a chance to show off their new wines for this year. Yes, we are open. The snow has been plowed away and we are Open!!!  If you are getting cabin fever from being inside all week from the snowstorms, come on out to Hummingbird Ridge Winery today and tomorrow and every Saturday and Sunday in February from 11am to 6pm and enjoy wine and chocolate, in honor of Valentine's. We even have the Chocolate Fountain running this weekend. Come out an dip marshmallows, cookies, pretzels, and even pineapple into the chocolate fountain. Free Admission and Free Tastings. If you can make it through the snow, Hummingbird Ridge Winery is open today from 11am to 6pm. We expect that some snowmobilers or 4 wheel drives will venture out to the winery today. Stop in for free wine tastings and wine and chocolate pairings today and tomorrow from 11am to 6pm.

February 2010 Hummingbird Ridge Winery Newsletter

Well, it's been a very eventful first 2 months for the winery! We have received a lot of positive feedback about the wines and we just received our first media article - see the previous post. We already have 2 local retaurants that are serving our wines. The first to carry our wines was Silver Lake Inn in Lewisberry and we thank owners Cat and Rex for their support! The Silver Lake Inn is also offering special hummingbird wine charms with each purchase of a glass of Hummingbird Ridge wines.  A brand new Newberry Township eatery, Back Woods Grill (formerly Bumber Bobs) is also serving Hummingbird Ridge wines and we thank owner Bob Conley and his staff for their support! Please ask for our wines when you visit these fine establishments.

The month of February is Wine & Chocolate month at Hummingbird Ridge Winery. Every Saturday & Sunday in February from 11am to 6pm, stop by the winery and enjoy wine and chocolate pairings to celebrate the month of Valentines.

In January, we introduced 2 new wines - Moonlight White (Vidal Blanc) and Sweet Dreams (Niagara), and both have been received very positively. Coming within the next few weeks are Shimmer (Diamond) and Red Reserve, a beautiful dry red with delicious depth of flavor.

Our First Media Article

We have been depending on word of mouth as our primary advertising and it seems to be working, but it's always nice to get some publicity from the media. Tom Day said his grandfather and great-grandfather both made wine, so you can understand where the gene originated. But what they didn’t do is elevate that practice of making wine for private consumption to something the public can purchase, which is what he has done with the opening of Hummingbird Ridge Winery in York Haven. That’s central Pennsylvania for those of you reading this from outside the midstate.
Located a few minutes off the Newberrytown exit (32) of I-83, between York and Harrisburg, the winery opened Nov. 20 and has been drawing lots of attention the two days a week (Saturday and Sunday, 11 a.m. to 6 p.m.) he’s open. Hummingbird Ridge belongs to the Uncork York! Wine Trail, which holds a Tour de Tanks event in March that has been doubling in attendance the past couple of years. Day was asked if he was ready. You could hear him start to laugh on the phone.
"They’re telling me buses come to this thing [Tour de Tanks]," he said, laughing. "A bus isn’t going to get up my driveway."  Lots of cars have, he said, since the first weekend the place opened. Asked how he’s doing advertising his business, Day said he hasn't had to. "It’s flying off the shelves. Everybody’s liking it," he said. "I tried to cater to this area as far as what I thought their taste would be, and I pretty much hit it on the head. People are going, ‘I don’t like red wines.’ Well, they’re leaving the winery with red wines. Or ‘I only drink reds,’ and they’re leaving with the whites."

His wine list leans toward sweet, semi-sweet and semi-dry, using juices from Vidal, Niagara and Concord grapes. He said that he sells one dry red made from the DeChaunac grape. "I have some more DeChaunac I’m going to be racking and oaking and it comes out, it has like chocolate overtones in it. It’s really nice."
Day spent 20 years in home winemaking, winning a number of awards, before deciding to turn the hobby into a business. He purchases the juice for all his wines.

"My theory is, if you grow your grapes, which is a whole other animal, you gotta go that season’s grapes and you gotta use that," he said. "My theory is, if I go to other juices I can taste the Concord here, taste the Concord there, taste the Concord at the next winery, and then I can pick out the best juice to make the best wine."

Moonlight White is made from Vidal Blanc grapes and features beautifully layered and delicious hints of pineapple and tropical citrus tones in a semi-sweet style. Sweet Dreams is made from Niagara grapes and reveals pure smooth Niagara grapiness with perfectly balanced sweetness and acidity, a true delight for Niagara lovers!
