We had some beautiful unseasonably warm weather for the Mason Dixon Wine Trail "Wine Just off the Vine" event in November. It was great to see a lot of familiar faces and also great to welcome new guests to our winery. Our mascot, Wally the Wine Bottle, was there to greet everyone and play his guitar. If you've never seen a wine bottle play guitar, then you've got to come to Hummingbird Ridge for wine trail events.

Our motto is “Experience The Flavor” and our goal is for every Hummingbird Ridge wine to be balanced and flavorful. We are open on Saturdays & Sundays from 11am to 6pm and our standard wine tastings are free of charge. We will also be open on Friday, December 9th & Friday, December 16th for Holiday shoppers. We have a nice variety of wine accessories and wine for the wine enthusiast on your gift list.

- HAPPY BIRTHDAY TO US!!! We are celebrating our 2nd year anniversary this coming weekend, December 3rd & 4th. Stop in and enjoy free food, wine tastings, and wine specials. Thanks to all of you, our first 2 years have been terrific and we have a lot of plans for making the winery even better for you. So stop in this coming weekend so that we can say Thank You!!

- December Wine Lineup: We are a microwinery and we make our wines in small batches so that we can focus on every detail of the winemaking process to craft the best wines for you. So at times we will sell out of certain wines.The following wines are currently available for tasting and purchase in our Tasting Room:
Red Reserve, Cabernet Sauvignon, full-bodied dry and delicious.


Semi-Dry Riesling, our crisp semi-dry white with bright citrus tones:


Hummingbird White, our soft and elegant semi-dry white


Sweet Dreams, sweet but smooth and flavorful


Ruby Elixir, our semi-sweet best-selling red.


Moonlight White, our (Award-Winning) semi-sweet Vidal Blanc with hints of honeyed pear and pineapple.


Pordevino, our port-style red wine with layers of blueberry and cherry flavor.


Pordeblanco, our port-style white wine, a unique flavor sensation with delicate citrus flavors.

- Recipe of the Month: Here is an easy and delicious recipe that is perfect for Holiday parties. We featured it at the Wine Just off the Vine wine trail event last month and everybody loved it, Hummingbird Ridge Winery Easy Ruby Meatballs Recipe


Ingredients: 1/4 cup Hummingbird Ridge Ruby Elixir wine; 1 can (14oz) jellied cranberry sauce; 1 bottle (12oz) chili sauce; 3/4 cup packed brown sugar; 1/2 tspn chili powder; 1/2 tspn ground cumin; 1/4 tspn cayenne pepper; 1 package (32oz) frozen fully cooked homestyle meatballs, thawed.


Instructions: Pour yourself a glass of Ruby Elixir wine. In a large saucepan over medium heat, combine the first 7 ingredients; stir until sugar is dissolved. Add meatballs; cook for 20-25 minutes or until hot, stirring occasionally. Makes about 6 dozen. Serve with Hummingbird Ridge Ruby Elixir. This sauce is also wonderful over chicken, pork, and meatloaf. Enjoy!!!

- Holiday Wine Tip for your Holiday Parties & Dinners: Since you will be serving a variety of people with a variety of food items, the best tip is to have a variety of wines available. For the person who only imbibes on the Holidays, a sweet red wine like Hummingbird Ridge Ruby Elixir is a perfect choice. For the experienced wine drinkers in the crowd, have a dry red wine like Hummingbird Ridge Red Reserve on hand. And for pairing with Holiday foods, Hummingbird Ridge Semi-dry Riesling goes great with seafood, while Hummingbird White is perfect with party appetizers. Two great wines to pair with Holiday dessert are Hummingbird Ridge Moonlight White and Pordevino, our hearty red port wine. Whatever you pour over the Holidays, all of us at Hummingbird Ridge Winery wish you all Happy Holidays!!!

We had some beautiful weekends in October  (except for the last snowy one) with the leaves showing their beautiful fall colors, and our 60's music party last month was cool, groovy, and far out with "The Happy Hippies" performing the hits of the 60's while the crowd enjoyed sipping on Hummingbird Ridge wine on the deck and the lawn. That will be our last lawn concert of the year, but we have had many requests for more music events, so we will continue them next Spring.

It is a glorious time of year and it is wine season everywhere! Be sure to stop by Hummingbird Ridge Winery for Free tastings of our New Releases.

- Port Wines are Back!!! Yes, our Red Port and White Port wines are now bottled and available for tasting and purchase. Port wines are wines that are fortified with Brandy. They are dessert wines but they are higher in alcohol than normal wines. Our winemakers have developed a method for crafting port wines that are extremely flavorful!

Our Red Port, Pordevino, is bursting with blueberry and cherry flavors and is more of a traditional style port. Our White Port, Pordeblanco, is one of the few white ports that we know of being made in the East coast. It is a truly unique taste experience with delicate citrus flavors of lemon and tangerine. You have to taste it to believe it! Come on in and taste both of these premium ports and give your taste buds a treat.

- Upcoming Mason Dixon Wine Trail Event:
Sample the New Wine Releases of the 13 wineries of the Mason Dixon Wine Trail (formerly Uncork York Wine Trail), including Hummingbird Ridge Winery. - We are in the process of completing our new Production Facility, which will be designed to allow us to increase wine production and add new wines to our wine lineup and also allow us to increase our Tasting Room space. We look forward to producing more quality wines for you with our new facility!

- Recipe of the Month: Here is an easy and delicious recipe that is perfect for your Holiday parties and dinners. We featured it at our Wine & Cheese Tasting & Seminar last month, Gorgonzola & Walnut Stuffed Mushrooms:  Ingredients: 1 cup crumbled Gorgonzola cheese; 1/4 cup Panko crumbs; 1/4 cup Heluva Good French Onion Dip; 1/4 cup chopped walnuts; 1 Tblsp. minced garlic; 16 medium mushroom caps. Preheat oven to Bake at 350 degrees. Mix together the first 5 ingredients. Wash mushrooms, Take mushroom stems out and discard the stems. Stuff the mushroom caps with the mixture and bake on a cookie sheet until mushrooms are soft and the cheese is brown, about 10-15 minutes. Serve with Hummingbird Ridge Red Reserve. Enjoy!!!

- In last months newsletter, we mourned the passing of Cathy (Cat) Towers, co-owner of the Silver Lake Inn and an avid supporter of Hummingbird Ridge Winery. It is with great sadness that we also mourn the passing of her husband and co-owner of the Silver Lake Inn, Rex Towers. Both of them battled serious health issues, but they supported Hummingbird Ridge Winery from the beginning. We will miss them both greatly, but we are consoled in the fact that they are together again.

The "monsoons" of Summer have hopefully left us now and the cool breezes of Autumn will hopefully dry us out. The leaves are starting to put on their annual colorful show and the grape harvest is in progress. It is a glorious time of year and it is wine season everywhere! - We would like to Thank everyone who came out to the 2nd Annual "Put a Cork in It" Wine & Dine Benefit for Relay for Life/American Cancer Society at Hummingbird Ridge on Sept. 30th and Oct. 1st. All enjoyed 4 delicious courses perfectly paired with 4 wines, along with Sangria and Warm Cider Wine.

- Upcoming Events:

October 15, 1-4pm; Hummingbird Ridge Winery presents free live music with an 60's Music Tribute by "The Happy Hippies". Wear your tie dye and come out and enjoy all the 60's songs that you know and love, and enjoy Hummingbird Ridge wine by the glass or bottle! Free Admission. Bring lawn chairs. Non-Hummingbird Ridge alcohol is not permitted on winery premises.

- October 28, Wine and Cheese Tasting and Seminar, featuring 5 courses Cheese Dishes (featuring Premium Cheeses from around the World) paired with 5 different Hummingbird Ridge Winery wines. Participants will also experience a series of fun exercises and seminars designed to test and enhance their wine knowledge, aromatic and taste senses, and winemaking knowledge.

- New Releases: Attention all of you Ruby Elixir and Moonlight White fans- They Are Back!!! Yes, our best-selling sweet red wine Ruby Elixir is back and available for tasting and purchase. Also, more of our Moonlight White, which won a Silver medal at this year's Finger Lakes wine competition in the Vidal Blanc category is bottled and available for tasting and purchasing. Stop in and taste these 2 Delicious wines!

- By Mid-October, you will notice a new building on the winery premises. This will be our new Production Facility, which will be designed to allow us to increase wine production and add new wines to our wine lineup and also allow us to increase our Tasting Room space. We look forward to producing more quality wines for you with our new facility!

- As many of you know, the Uncork York Wine Trail, of which we are a member, has been going through some changes, including a name change and the addition of more wineries. The new wine trail was officially announced last month at a media event. The new name is The Mason Dixon Wine Trail and it will now include some Maryland wineries, as well as Pennsylvania wineries. - Recipe of the Month: Gourmet Toasted Cheese Sandwiches- Here is a simple way to take Toasted Cheese Sandwiches to a whole new level. We featured these at our last Wine & Cheese event and they were a big hit. Ingredients: Slices of your favorite bread, Brie cheese, 2 Granny Smith apples (cored peeled and sliced). Butter the backs of the bread, place several slices of Brie cheese and several slices of apple on the dry inside of the bread. Toast until cheese is melted and outside of bread is golden brown. Serve with Hummingbird Ridge Semi-dry Riesling and Enjoy!!!

- Hummingbird Ridge Winery is mourning the passing of Cathy (Cat) Towers, co-owner of the Silver Lake Inn and an avid supporter of the winery. Cat was a great friend to the winery and she wanted Silver Lake Inn to be the first restaurant to carry our wines. She believed in us before we believed in ourselves and we miss her greatly. We raise a toast to you, Cat!

-         A big Thank You to all of you who came out for the Beatles Tribute event at Hummingbird Ridge Winery last month. We had a blast with the "Day Trippers" playing all Beatles songs and everyone singing along. We will be having our last Deck Party of the year in October with a musical tribute to the 60's by the "Happy Hippies" playing all music from the 60's. Wear your bell bottoms and tie dye shirts. More information to come.

- Once again this year, we are presenting a Wine & Dine Benefit for Relay for Life and the American Cancer Society. Hummingbird Ridge Winery presents "Put a Cork In It", a Fun evening of Food and Wine to benefit Relay For Life and The American Cancer Society. Receive a Hummingbird Ridge Logo Wine Glass and 4 Delicious Courses paired with 4 Specially Selected Hummingbird Ridge wines.
4 Sessions to choose from: Friday, Sept. 30 at 6pm or 7:30pm or Saturday, Oct. 1 at 6pm or 7:30pm. Please join us for a fun evening of Great Food and Wine for a Great Cause!!! - We hope to have our new wine production facility up and running soon. We have received most of our permits and approvals. This new facility will allow us to enlarge the tasting room and have capacity to produce more wine, so look for some big changes coming soon.

- We are a microwinery, which means that we produce our wines in small batches, which allows us to closely watch every detail of the wine process, so our wine lineup changes as we sell out of some wine and bottle other wines.  The lineup for September is:

Red Reserve, Cabernet Sauvignon, full-bodied and delicious. Available for tasting with a good supply in stock. 
Semi-Dry Riesling, It’s back and available for tasting with a good supply in stock. 
Hummingbird White, our soft and elegant semi-dry white: Available for tasting with a good supply in stock.
Sweet Dreams, our sweet and flavorful Niagara: Available for tasting with a good supply in stock.
Crimson Nectar, our delicious sweet Red: Available for tasting with a limited supply in stock.
The following wines will be bottled and available within the next 30 to 60 days.

- Recipe of the Month: Delicious Spaghetti Sauce from a Jar in Minutes: Most spaghetti sauces in a jar at the supermarket are bland and watery, but who has the time to make it from scratch. An easy solution is to “doctor” up the jar sauce and turn it into a delicious flavorful sauce in minutes. Of course, you will need some delicious Hummingbird Ridge wine for the sauce and for the cook. 1) Pour yourself a glass of Hummingbird Red wine  2) Pour your favorite jar spaghetti sauce into a sauce pan 3) Add a splash of Hummingbird Red wine from your wine glass into the sauce and add a drizzle of good olive oil 4) Add your favorite herbs, fresh or from your spice rack 5) Simmer on medium heat for 10-15 minutes 6) Serve over pasta and Enjoy!  Quick and Easy and much more flavorful! And if you want to kick it up even more, while the sauce is simmering, sautรฉ some onions in good olive oil with mushrooms, pork or turkey sausage or pepperoni and add to the sauce. Add anything you want, the options are endless.

- Tip of the Month: With local wineries now springing up in most parts of Pennsylvania, be sure to ask for local wine when you go to your favorite restaurant. Restaurant owners need to know that there is a demand for local wine before they will take a chance on it. If local wine is available on a restaurant wine list, many customers will choose the local wine to support local business. So make it a point to ask the waitress or bartender at your favorite local restaurant for local wine choices.

We sure had some hot days in July, but Hummingbird Ridge Winery has been doing its best to help keep everyone refreshed with our Summer Sangria Celebration, featuring free samples of a featured Sangria every weekend, with Sangria available by the glass to enjoy on our New Wine Deck. Stop by in August for Sangria!!!

- Upcoming Events:
August 20, 1-4pm; Hummingbird Ridge Winery presents Free live music with an acoustic Beatles Tribute by "The Day Trippers".  Come out and enjoy all the Beatles songs that you know and love, and enjoy Hummingbird Ridge wine by the glass or bottle!  Free Admission. Bring lawn chairs. Non-Hummingbird Ridge alcohol is not permitted on winery premises.
We held our first educational event at the winery last month with a Wine and Cheese Tasting and Seminar, which featured 5 courses of Light Snacks and Appetizers (featuring Premium Cheeses from around the World) paired with 5 different Hummingbird Ridge Winery wines. The participants were also led through a series of exercises designed to test their wine knowledge, aromatic and taste senses, and teach some winemaking skills. We will be scheduling another session like this in a couple months.
-      As many of you know, the Uncork York Wine Trail, of which we are a member, has been going through some changes, including a name change. The new name will be The Mason Dixon Wine Trail and will now include some Maryland wineries, as well as Pennsylvania wineries. - A big Thank You to everyone who came out to the Grand Opening of our New Wine Deck on June 4th. We had a great time with live music by the "Son of a Beach" Jimmy Buffett Tribute. There were a lot of Parrotheads there from the local Parrothead Clubs and we Thank Mary Chopak of the Parrotheads in Amish Paradise club, who wrote the following about the event in the club newsletter, The Tequila Times:  
"On a recent Saturday afternoon in June, Hummingbird  Ridge Winery in Newberrytown hosted the grand  opening of their new deck with a Jimmy Buffett deck  party featuring “Son of a Beach”.  It started off as a perfect spring day, low humidity  and plenty of sunshine. Andy and I stocked the car with chairs, some finger foods and my sister and her  husband who were visiting for the weekend.
When we arrived at the winery, we were astonished at the amount of people that had already arrived. We staked a claim in an area under shade where we could hear the music as all the tables were filled. Looking around we spotted some of our Amish Parrotheads and also folks from the Hanover Society Club.
As my sister had not been at Hummingbird before, we took her inside to taste the delicious wines. Judy, another Amish Parrothead, was helping out with the wine pouring. After tasting we purchased a bottle or two and went outside to mingle with the other Parrotheads and enjoy the music. It was a great venue and only after some liquid sunshine started falling did we make our way out of the winery."

The saying "April showers bring May flowers" was never more appropriate than this year, with record-setting amounts of precipitation last month in Central PA. Thank You to all of you who braved the storms to come to Hummingbird Ridge Winery. Hopefully, warm and sunny weather will greet the hummingbirds as they arrive in Central PA. We are open on Saturdays & Sundays from 11am to 6pm and our standard wine tastings are free of charge. - The April rains slowed down construction of our new Wine Deck, but our contractor tells us that it should be done soon, as long as the weather cooperates. So be sure to stop out in a few weeks and enjoy a glass of wine on the new deck!

- In case you haven't heard yet, Hummingbird Ridge Winery has won a Silver Medal with their very first entry into an International Wine Competition. Hummingbird Ridge Winery's Moonlight White, made from the Vidal Blanc grape, won a Silver medal last month at the Finger Lakes International Wine Competition. Moonlight White was judged along with over 3200 wines from 19 countries.
Tom Day, owner of Hummingbird Ridge Winery, stated "This really validates our small batch process and our attention to detail through every step of the winemaking process. It is great that professional wine judges deem Hummingbird Ridge wine to be worthy of a medal." The first bottling of Moonlight White sold out quickly after news of the Silver medal got out, but there is more in the tanks and we will be bottling more very soon.

- We are a microwinery and we make our wines in small batches so that we can focus on every detail of the winemaking process. So at times we will sell out of certain wines. Here is the current wine lineup in the tasting room for May:

- Tip and Recipe of the Month: The tip this month ties in with this month's recipe. For those of us who are sensitive to onions when we are cutting them, there was an article recently that listed ways to reduce the tear-inducing fumes produced when cutting onions: 1. Use a sharp knife and work quickly 2) Cut near an open flame: The flame sucks in air and therefore pulls the gas away from your eyes. 3) Chill or Freeze the onion for 15 -30 minutes before cutting 4) Spritz the cutting board with vinegar before cutting 5) Cut the onions underwater 6) Use a Fan to blow the onion fumes away from you 7) Wet your hands with water or vinegar before cutting 8) Use plastic Safety Goggles 9) Cover the chopped onion as you cut the rest of the onion 10) Chew gum or bread 11) If you have contact lens, wear them 12) Breathe through your mouth, not through your nose 13) Rinse the cut portions immediately after slicing onion in half and keep onion halves face down.

Grilling season is upon us and Caramelized Onions make a great addition to grilled meats. Here is a great way to make perfect Caramelized Onions every time: Caramelizing significantly reduces the volume of the onions so even if you start out with a pan full of raw onion, they will cook down substantially. For most purposes, one onion per person serves as a good rule of thumb. A heavy non-stick or well-seasoned iron skillet is best. Get sweet yellow or white onions. After cleaning the onion of the skin and the root and stem tips, cut the onions in half, top to bottom. Then slice the onions, flat side down, to make thin strips of onion. Make sure to separate the layers.
 
Pour enough olive oil (or olive oil and butter) to coat the bottom of the skillet plus about a tablespoon more (about 1 teaspoon per onion). Heat the skillet on high until the oil is very hot but not smoking. Add the onion slices and stir to coat the onions with the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally. After 10 minutes, sprinkle some salt over the onions, and if you want, you can add some sugar to help with the caramelization process. (add about a teaspoon of sugar for 5 onions. You will need to watch it very closely throughout the cooking to ensure the sugar does not burn.)
 
Let cook for 30 minutes to an hour more, stirring every few minutes. As soon as the onions start sticking to the pan, let them stick a little and brown, but then stir them before they burn. The trick is to let them alone enough to brown (if you stir them too often, they won't brown), but not so long so that they burn. After the first 20 to 30 minutes you may want to lower the stove temperature a little, and add a little more oil if you find the onions are verging on burning. A metal spatula will help you scrape up the browned bits from the bottom of the pan as the caramelization proceeds. As the onions cook down, you may find you need to scrape the pan every minute, instead of every few minutes.

Continue to cook and scrape, cook and scrape, until the onions are a rich, browned color. At the end of the cooking process, add 3 to 4 Tablespoons of white wine (Hummingbird White works perfect for this) to help deglaze the pan and bring some additional flavor to the onions. Salt and pepper to taste. Optional ingredients- add any of the following for flavor: Add soy sauce, Bacon pieces, cooked apples or pears, fresh herbs, or cheese. Any extra Caramelized Onions can be sealed in a freezer bag and frozen, then microwave or reheated in skillet when ready to use. Use these to add flavor to pizza's, sandwiches, omelet's, fajitas, with fried, mashed or baked potatoes, added to mac and cheese or just on their own. However you enjoy them, make sure to serve them with Hummingbird Ridge wine. Enjoy!!!

- This Exciting News Just In!!!!!  Central Pennsylvania's Hummingbird Ridge Winery has won a Silver Medal with their very first entry into an International Wine Competition. - Our new deck is currently under construction and should be completed by the end of April. We will be announcing our Deck Opening Celebration very soon! Soon you will be able to stop in and enjoy a glass or bottle of wine on the deck while you watch for hummingbirds at the feeders.

- Recipe of the Month: Cog Au Vin Blanc (Chicken Vegetable Stew with White Wine) This was such a hit during the Tour de Tanks last month and we had so many requests for the recipe that we decided to feature the recipe this month:
Ingredients: 3 Chicken Breasts (with bone) with skin on; 4 Tablespoons Butter; 1 onion diced; 4 celery ribs diced; 3 Tablespoons chicken base or to taste; 3 quarts water; 2 bags frozen mixed vegetables; 1 box of small sized pasta; 3 small cans of tomato soup; 2 cups of Hummingbird White wine
Directions- Boil chicken until cooked. Pick the chicken off the bone. Set aside and let cool. In a soup pot, saute onion and celery in butter until soft. Add 3 quarts of water and chicken base. Bring to a boil. Add 2 bags of frozen mixed vegetables and the box of pasta. Add the tomato soup, the chicken pieces, and the wine. Salt and pepper to taste. Simmer for 20 minutes.
Since Hummingbird White is used in the recipe, it's only natural to enjoy a glass of Hummingbird White with this stew. Enjoy!!!

Well, winter continues to "delight" us with its cold temps and frozen precipitation. But February is here and we can almost see the end of winter in sight. Thankfully, visitors continue to brave the winter conditions and visit our tasting room to taste our new wine releases. The rest of us may be cold but our hearts are warm as we think of our Valentine's this month. - Recipe of the Month: Wine and Chocolate Cupcakes
Ingredients
3 cups all purpose flour
2 cups granulated sugar
1 Tbs baking powder
1/2 tsp salt
1/2 cup unsweetened cocoa powder
6 eggs
1 1/2 cups Hummingbird Ridge Pordevino, Reserve Red, or Hummingbird Red wine
2 tsp vanilla extract
1/2 cup vegetable oil
1 cup dark chocolate chips (melted)

Directions
1. Preheat oven to 325ยบ F.
2. Line 2 cupcake pans. (Tip: After you line the pans, spray the liners with some non-stick spray. It will keep the cupcakes from sticking to the paper.
3. In a large mixing bowl sift together the flour, sugar, baking powder, salt and cocoa powder. Mix everything so that it is evenly distributed.
4. Make a “well” in the center of the dry ingredients.
5. Into the well, pour in the wine, vanilla, oil and eggs.
6. Mix on low speed until combined and lump free.
7. Pour in the melted chocolate chips and mix until thoroughly combined.
8. Fill lined cupcake pan. Fill each liner to the top.
9. Bake for 20 to 25 minutes. The cupcakes will puff quite a bit, and when done should be slightly firm to the touch, but be able to spring back.
10. Let cool slightly before dipping in chocolate wine topping.


Chocolate Wine topping
This makes a lot, but the leftovers can be used as a topping for ice cream and other sweet treats.
Ingredients
2 1/2 cups dark chocolate chips
1 14oz. can sweetened condensed milk
1/2 cup red wine (same as used in the cupcakes)
1/2 cup karo syrup
4 tsp balsamic vinegar

Directions
1. Microwave everything in a microwave safe bowl for two minutes.
2. Remove from microwave, carefully, and stir until smooth and shiny.
3. Let cool, and dip cupcake tops into the chocolate.
4. Repeat after they've set up a bit

- Wine Tip of the Month: When pairing wine with chocolate, typically the wine should be at least as sweet, if not a touch sweeter, than the chocolate you are serving it with. Otherwise, the taste may quickly veer towards bitter or sour.
When pairing wines with chocolate, your best bet is to match lighter, more elegant flavored chocolates with lighter-bodied wines; likewise, the stronger the chocolate, the more full-bodied the wine should be.
Similar to a formal wine tasting, if you will be experimenting with several varieties of chocolates, work from light to dark. Start with a more subtle white chocolate and end on a dark or bittersweet chocolate.
White chocolate tends to be more sweet, mellow and buttery in flavor and generally pairs well with sweet white wines. Milk Chocolate generally pairs well with semi-dry reds and some whites, and Dark chocolate generally pairs well with Dry reds and Port wines. But these are just general suggestions. Dare to be bold and experiment. You will find that the perfect wine and chocolate pairings bring out the best in both the wine and the chocolate!
