-         A big Thank You to all of you who came out for the Beatles Tribute event at Hummingbird Ridge Winery last month. We had a blast with the "Day Trippers" playing all Beatles songs and everyone singing along. We will be having our last Deck Party of the year in October with a musical tribute to the 60's by the "Happy Hippies" playing all music from the 60's. Wear your bell bottoms and tie dye shirts. More information to come.

- Once again this year, we are presenting a Wine & Dine Benefit for Relay for Life and the American Cancer Society. Hummingbird Ridge Winery presents "Put a Cork In It", a Fun evening of Food and Wine to benefit Relay For Life and The American Cancer Society. Receive a Hummingbird Ridge Logo Wine Glass and 4 Delicious Courses paired with 4 Specially Selected Hummingbird Ridge wines.

- We hope to have our new wine production facility up and running soon. We have received most of our permits and approvals. This new facility will allow us to enlarge the tasting room and have capacity to produce more wine, so look for some big changes coming soon.

- We are a microwinery, which means that we produce our wines in small batches, which allows us to closely watch every detail of the wine process, so our wine lineup changes as we sell out of some wine and bottle other wines.  The lineup for September is:

Red Reserve, Cabernet Sauvignon, full-bodied and delicious. Available for tasting with a good supply in stock. 
Semi-Dry Riesling, It’s back and available for tasting with a good supply in stock. 
Hummingbird White, our soft and elegant semi-dry white: Available for tasting with a good supply in stock.
Sweet Dreams, our sweet and flavorful Niagara: Available for tasting with a good supply in stock.
Crimson Nectar, our delicious sweet Red: Available for tasting with a limited supply in stock.
The following wines will be bottled and available within the next 30 to 60 days.

- Recipe of the Month: Delicious Spaghetti Sauce from a Jar in Minutes: Most spaghetti sauces in a jar at the supermarket are bland and watery, but who has the time to make it from scratch. An easy solution is to “doctor” up the jar sauce and turn it into a delicious flavorful sauce in minutes. Of course, you will need some delicious Hummingbird Ridge wine for the sauce and for the cook. 1) Pour yourself a glass of Hummingbird Red wine  2) Pour your favorite jar spaghetti sauce into a sauce pan 3) Add a splash of Hummingbird Red wine from your wine glass into the sauce and add a drizzle of good olive oil 4) Add your favorite herbs, fresh or from your spice rack 5) Simmer on medium heat for 10-15 minutes 6) Serve over pasta and Enjoy!  Quick and Easy and much more flavorful! And if you want to kick it up even more, while the sauce is simmering, sauté some onions in good olive oil with mushrooms, pork or turkey sausage or pepperoni and add to the sauce. Add anything you want, the options are endless.

- Tip of the Month: With local wineries now springing up in most parts of Pennsylvania, be sure to ask for local wine when you go to your favorite restaurant. Restaurant owners need to know that there is a demand for local wine before they will take a chance on it. If local wine is available on a restaurant wine list, many customers will choose the local wine to support local business. So make it a point to ask the waitress or bartender at your favorite local restaurant for local wine choices.

We sure had some hot days in July, but Hummingbird Ridge Winery has been doing its best to help keep everyone refreshed with our Summer Sangria Celebration, featuring free samples of a featured Sangria every weekend, with Sangria available by the glass to enjoy on our New Wine Deck. Stop by in August for Sangria!!!
Our motto is “Experience The Flavor” and our goal is for every Hummingbird Ridge wine to be balanced and flavorful. We are open on Saturdays & Sundays from 11am to 6pm and our standard wine tastings are free of charge.

- Upcoming Events:
August 20, 1-4pm; Hummingbird Ridge Winery presents Free live music with an acoustic Beatles Tribute by "The Day Trippers".  Come out and enjoy all the Beatles songs that you know and love, and enjoy Hummingbird Ridge wine by the glass or bottle!  Free Admission. Bring lawn chairs. Non-Hummingbird Ridge alcohol is not permitted on winery premises.
We held our first educational event at the winery last month with a Wine and Cheese Tasting and Seminar, which featured 5 courses of Light Snacks and Appetizers (featuring Premium Cheeses from around the World) paired with 5 different Hummingbird Ridge Winery wines. The participants were also led through a series of exercises designed to test their wine knowledge, aromatic and taste senses, and teach some winemaking skills. We will be scheduling another session like this in a couple months.
-      As many of you know, the Uncork York Wine Trail, of which we are a member, has been going through some changes, including a name change. The new name will be The Mason Dixon Wine Trail and will now include some Maryland wineries, as well as Pennsylvania wineries. This will make our wine trail bigger and better, with more wine choices for you! The new website is www.masondixonwinetrail.com  Look for more info coming soon.
- A big Thank You to everyone who came out to the Grand Opening of our New Wine Deck on June 4th. We had a great time with live music by the "Son of a Beach" Jimmy Buffett Tribute. There were a lot of Parrotheads there from the local Parrothead Clubs and we Thank Mary Chopak of the Parrotheads in Amish Paradise club, who wrote the following about the event in the club newsletter, The Tequila Times:  
"On a recent Saturday afternoon in June, Hummingbird  Ridge Winery in Newberrytown hosted the grand  opening of their new deck with a Jimmy Buffett deck  party featuring “Son of a Beach”.  It started off as a perfect spring day, low humidity  and plenty of sunshine. Andy and I stocked the car with chairs, some finger foods and my sister and her  husband who were visiting for the weekend.
When we arrived at the winery, we were astonished at the amount of people that had already arrived. We staked a claim in an area under shade where we could hear the music as all the tables were filled. Looking around we spotted some of our Amish Parrotheads and also folks from the Hanover Society Club.
As my sister had not been at Hummingbird before, we took her inside to taste the delicious wines. Judy, another Amish Parrothead, was helping out with the wine pouring. After tasting we purchased a bottle or two and went outside to mingle with the other Parrotheads and enjoy the music. It was a great venue and only after some liquid sunshine started falling did we make our way out of the winery."

The saying "April showers bring May flowers" was never more appropriate than this year, with record-setting amounts of precipitation last month in Central PA. Thank You to all of you who braved the storms to come to Hummingbird Ridge Winery. Hopefully, warm and sunny weather will greet the hummingbirds as they arrive in Central PA. - The April rains slowed down construction of our new Wine Deck, but our contractor tells us that it should be done soon, as long as the weather cooperates. So be sure to stop out in a few weeks and enjoy a glass of wine on the new deck!

- In case you haven't heard yet, Hummingbird Ridge Winery has won a Silver Medal with their very first entry into an International Wine Competition. Hummingbird Ridge Winery's Moonlight White, made from the Vidal Blanc grape, won a Silver medal last month at the Finger Lakes International Wine Competition. Moonlight White was judged along with over 3200 wines from 19 countries.
Tom Day, owner of Hummingbird Ridge Winery, stated "This really validates our small batch process and our attention to detail through every step of the winemaking process. It is great that professional wine judges deem Hummingbird Ridge wine to be worthy of a medal." The first bottling of Moonlight White sold out quickly after news of the Silver medal got out, but there is more in the tanks and we will be bottling more very soon.

- Tip and Recipe of the Month: The tip this month ties in with this month's recipe. For those of us who are sensitive to onions when we are cutting them, there was an article recently that listed ways to reduce the tear-inducing fumes produced when cutting onions: 1. Use a sharp knife and work quickly 2) Cut near an open flame: The flame sucks in air and therefore pulls the gas away from your eyes. 3) Chill or Freeze the onion for 15 -30 minutes before cutting 4) Spritz the cutting board with vinegar before cutting 5) Cut the onions underwater 6) Use a Fan to blow the onion fumes away from you 7) Wet your hands with water or vinegar before cutting 8) Use plastic Safety Goggles 9) Cover the chopped onion as you cut the rest of the onion 10) Chew gum or bread 11) If you have contact lens, wear them 12) Breathe through your mouth, not through your nose 13) Rinse the cut portions immediately after slicing onion in half and keep onion halves face down.

Grilling season is upon us and Caramelized Onions make a great addition to grilled meats. Here is a great way to make perfect Caramelized Onions every time: Caramelizing significantly reduces the volume of the onions so even if you start out with a pan full of raw onion, they will cook down substantially. For most purposes, one onion per person serves as a good rule of thumb. A heavy non-stick or well-seasoned iron skillet is best. Get sweet yellow or white onions. After cleaning the onion of the skin and the root and stem tips, cut the onions in half, top to bottom. Then slice the onions, flat side down, to make thin strips of onion. Make sure to separate the layers.
 
Pour enough olive oil (or olive oil and butter) to coat the bottom of the skillet plus about a tablespoon more (about 1 teaspoon per onion). Heat the skillet on high until the oil is very hot but not smoking. Add the onion slices and stir to coat the onions with the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally. After 10 minutes, sprinkle some salt over the onions, and if you want, you can add some sugar to help with the caramelization process. (add about a teaspoon of sugar for 5 onions. You will need to watch it very closely throughout the cooking to ensure the sugar does not burn.)
 
Let cook for 30 minutes to an hour more, stirring every few minutes. As soon as the onions start sticking to the pan, let them stick a little and brown, but then stir them before they burn. The trick is to let them alone enough to brown (if you stir them too often, they won't brown), but not so long so that they burn. After the first 20 to 30 minutes you may want to lower the stove temperature a little, and add a little more oil if you find the onions are verging on burning. A metal spatula will help you scrape up the browned bits from the bottom of the pan as the caramelization proceeds. As the onions cook down, you may find you need to scrape the pan every minute, instead of every few minutes.

Continue to cook and scrape, cook and scrape, until the onions are a rich, browned color. At the end of the cooking process, add 3 to 4 Tablespoons of white wine (Hummingbird White works perfect for this) to help deglaze the pan and bring some additional flavor to the onions. Salt and pepper to taste. Optional ingredients- add any of the following for flavor: Add soy sauce, Bacon pieces, cooked apples or pears, fresh herbs, or cheese. Any extra Caramelized Onions can be sealed in a freezer bag and frozen, then microwave or reheated in skillet when ready to use. Use these to add flavor to pizza's, sandwiches, omelet's, fajitas, with fried, mashed or baked potatoes, added to mac and cheese or just on their own. However you enjoy them, make sure to serve them with Hummingbird Ridge wine. Enjoy!!!

- This Exciting News Just In!!!!!  Central Pennsylvania's Hummingbird Ridge Winery has won a Silver Medal with their very first entry into an International Wine Competition. - Our new deck is currently under construction and should be completed by the end of April. We will be announcing our Deck Opening Celebration very soon! Soon you will be able to stop in and enjoy a glass or bottle of wine on the deck while you watch for hummingbirds at the feeders.

- Recipe of the Month: Cog Au Vin Blanc (Chicken Vegetable Stew with White Wine) This was such a hit during the Tour de Tanks last month and we had so many requests for the recipe that we decided to feature the recipe this month:
Ingredients: 3 Chicken Breasts (with bone) with skin on; 4 Tablespoons Butter; 1 onion diced; 4 celery ribs diced; 3 Tablespoons chicken base or to taste; 3 quarts water; 2 bags frozen mixed vegetables; 1 box of small sized pasta; 3 small cans of tomato soup; 2 cups of Hummingbird White wine
Directions- Boil chicken until cooked. Pick the chicken off the bone. Set aside and let cool. In a soup pot, saute onion and celery in butter until soft. Add 3 quarts of water and chicken base. Bring to a boil. Add 2 bags of frozen mixed vegetables and the box of pasta. Add the tomato soup, the chicken pieces, and the wine. Salt and pepper to taste. Simmer for 20 minutes.
Since Hummingbird White is used in the recipe, it's only natural to enjoy a glass of Hummingbird White with this stew. Enjoy!!!
