-      Did April seem to be colder than March? This crazy weather has things all mixed up. But what is certain is our Appreciation for your continued support. Thank You to all of you who stopped in to see us last month!

-      The first 3 weekends in May feature the first wine event from the newest wine trail in Central PA, the Hershey Harrisburg Wine Country. The event is called “Sweet Sensations” and participants will get  a logo wine glass, wine and chocolate pairings at 9 wineries including Hummingbird Ridge, plus 10% off all wine purchases. -      Calling all Central PA Parrotheads: Our popular Tribute to Jimmy Buffett is on Saturday, May 19th at the winery from 1pm to 4pm, featuring “Sons of a Beach”. Free Admission. Bring your lawn chairs and your “Island Vibe”. Enjoy an afternoon of Buffett at Hummingbird Ridge!

-      Our Reserve Red is back on the shelves and available for tasting. For all of you who like a Serious dry Red, this is your wine! Stop in and Taste it!

-      This just Announced: The 1st Annual Newberrytown Wine, Chili, and Blues Festival will be held at Newberrytown Peddlers Market on September 15th from 11am to 4pm. This Festival will feature wine tastings from PA wineries, a chili cookoff judged by festival attendees, and some great Blues music, featuring the Queen of Blues Harmonica, Octavia and her band. And Hummingbird Ridge Winery will be there too! For tickets and info, visit www.pa-wine-chili-blues.com  

If you know of any food, jewelry, arts, crafts or other vendors that would like to sell their products at the Festival, have them contact Kathy at 717-932-4264. - For all of you who have been asking for weekday hours, we are now open on Fridays from 11am to 6pm, in addition to our weekend hours from 11am to 6pm on Saturday and Sunday.

Our motto is “Experience The Flavor” and our goal is for every Hummingbird Ridge wine to be balanced and flavorful. We are open on Fridays, Saturdays and Sundays from 11am to 6pm and our standard wine tastings are free of charge.

- May Wine Lineup: We are a microwinery and we make our wines in small batches so that we can focus on every detail of the winemaking process to craft the best wines for you. -       Wine News Story of the Month: Remember how we have always been told that wine with screwcaps is of lower quality than wine with corks. Well, it turns out that is not true. A large winery recently made a case for screwcaps with the release of a multi-year study showing that wines topped with a screwcap taste as good or better over time than wines topped with natural cork or other closures.  This is just the latest in a string of studies showing that screwcaps are the better wine closure for retaining wine flavors, especially in aromatic white wines. The study summary is at http://hoguecellars.com/screw_cap_faq.php 

But will consumers move away from the longstanding belief that corks are better, and will they continue to want cork closures for the romance and tradition of opening the bottle with a cork screw? Only time will tell.

- Visitors ask us all the time, Why did you name the winery Hummingbird Ridge? No, it's not because we have any more hummingbirds here than anywhere else, but we do get our fair share. The name actually comes from one particular hummingbird.

When owner Tom Day first bought the property where the winery is located, there was a hummingbird that would follow him around as he walked the grounds, zigzagging and fluttering around him as if to welcome him to the property. Then and there, Tom knew that he had to include Hummingbird in the name of the new winery he was building, in honor of that welcoming hummingbird. So that's where the name Hummingbird Ridge Winery comes from.

THIS JUST IN! Hummingbird Ridge Winery's Apple wine, "Adams Apple", won a Bronze Medal last weekend at the Finger Lakes International Wine Competition in Syracuse NY, as over 3200 wines from 22 countries were judged. Adams Apple is made from locally grown York County apples, sourced from AAA Acres in Manchester PA. Many Thanks to Ed and Barb Ahrens, owners of AAA Acres for growing great apples for this wine! AAA Acres grows great fruit and produce and you can find them at The Newberrytown Peddlers market every weekend. Be sure to visit them for exceptional locally grown produce. Be sure to stop in and taste Adams Apple while it lasts.

- Wildflower White is back on the shelves at Hummingbird Ridge Winery. Stop in and try this semi-sweet top seller, with layer after layer of tropical flavors.

- The winery was very busy in March with the unusually warm weather bringing in lots of wine enthusiasts to the Hummingbird Ridge tasting room to enjoy the Mason Dixon Wine Trail "Tour de Tanks" event. Thank You to all of you who stopped in to see us last month!

- Recipe of the Month: Vegetable Beef Soup with a Kick- Another great recipe by Brenda, We featured this in March for the Tour de Tanks event and everyboy just loved it!

Ingredients: 1 bottle Hummingbird Red Wine; a 2 pound Chuck Roast; 8 quarts water; 3 Tblsp beef base; 2 bags frozen broccoli (Normandy blend); 3 bags frozen mixed vegetables; 4 15-oz cans tomato sauce; 1/2 tsp celery seed; 2 bay leaves; 1 Tblsp parsley flakes; salt and pepper to taste.

Instructions: Pour yourself a glass of Hummingbird Red wine and sip it while making the recipe. Roast a 2 pound Chuck Roast at 325 degrees for 60-90 minutes. Let the beef cool for 30 minutes. Trim the fat off the beef and shred the beef into small pieces. Pour the juice from the roast into a 12 quart stock pot. Add the remaining ingredients (except wine) and bring to a boil over medium high heat. Boil for 5 minutes. Turn heat off, stir in 1/2 bottle of Hummingbird Red wine. Let it cool. Enjoy it with Hummingbird Red wine!

The winery was very busy last month with our 2nd Annual Winter Winderland Port event. Customers enjoyed tasty treats and Port wine specials. The big hit of the event, though, was our "Rita on the Ridge", a margarita made from our white port wine Pordeblanco. Special Thanks to our friend Sue, a margarita connoisseur, for inventing the drink for us! You have to stop in and taste it! Makes a great drink for your Super Bowl party:

"Rita on the Ridge" (Pordeblanco Margarita): In a large pitcher, mix 2 cups Hummingbird Ridge Pordeblanco port wine, 4 cups liquid Margarita mix, 1 1/3 cup Orange juice. Stir and serve over ice. Enjoy!!!

It was a great Holiday season at Hummingbird Ridge Winery with lots of old friends stopping in and we made a lot of new friends too! Thank You all so much for supporting us in 2011 and we wish you all a Prosperous 2012! We have some new things planned for 2012, including new weekday hours, more wine choices including sparkling wines, more events at the winery, and beer and wine making supplies available at the winery. We will be announcing more information in the coming months.

Our motto is “Experience The Flavor” and our goal is for every Hummingbird Ridge wine to be balanced and flavorful. We are open on Saturdays and Sundays from 11am to 6pm and our standard wine tastings are free of charge.

- UPCOMING EVENTS:
This month at the winery is our annual "Winter Winederland" event on January 20th to 22nd. Come in out of the cold and warm up with tasty treats, free wine and Port tastings, and special sale prices on our Port wines:

January Wine Lineup: We are a microwinery and we make our wines in small batches so that we can focus on every detail of the winemaking process to craft the best wines for you. So at times we will sell out of certain wines. The following wines are currently available for tasting and purchase in our Tasting Room:

Red Reserve, Cabernet Sauvignon, full-bodied dry and delicious.
Semi-Dry Riesling, our crisp semi-dry white with bright citrus tones:
Hummingbird White, our soft and elegant semi-dry white
Sweet Dreams, sweet but smooth and flavorful
Ruby Elixir, our semi-sweet best-selling red.
Moonlight White, our (Award-Winning) semi-sweet Vidal Blanc with hints of honeyed pear and pineapple. (Moonlight is selling fast, so get it while you can!)
Pordevino, our port-style red wine with layers of blueberry and cherry flavor.
Pordeblanco, our port-style white wine, a unique flavor sensation with delicate citrus flavors.
Coming Soon: Our first blush wine called Celebration Blush, the perfect wine for any celebration!

- Recipe of the Month: Here is a delicious recipe that will warm you up over the winter with a taste of Hawaii. We featured it at our Wine and Cheese event last year and it was a big hit, Hummingbird Ridge Winery "Hawaiian Cheese Bread" Recipe
Ingredients: 1 bottle Hummingbird Ridge Semi-dry Riesling; 1 loaf (1 pound) Hawaiian Sweet Bread (available at most grocery stores); 8 ounce block of Swiss cheese; 1 small red onion, chopped; 1/2 cup butter, melted; 3 garlic cloves, minced; 1 teaspoon salt.
Instructions: Pour yourself a glass of Hummingbird Ridge Semi-dry Riesling and sip while preparing bread. Cut bread into 1 inch slices down to 1 inch from bottom of loaf (Do not slice all the way through loaf, leave 1 inch). Repeat cuts in opposite direction to intersect with first cuts. Cut swiss cheese into 1/4 inch slices. Insert cheese into bread between cuts. Combine onion, butter, garlic, and salt and spoon over bread. Wrap loaf in foil. Bake at 350 degrees for 25-30 minutes or until cheese is melted. Serve with Hummingbird Ridge Semi-dry Riesling. Enjoy!!!

We had some beautiful unseasonably warm weather for the Mason Dixon Wine Trail "Wine Just off the Vine" event in November. It was great to see a lot of familiar faces and also great to welcome new guests to our winery. Our mascot, Wally the Wine Bottle, was there to greet everyone and play his guitar. If you've never seen a wine bottle play guitar, then you've got to come to Hummingbird Ridge for wine trail events.

Our motto is “Experience The Flavor” and our goal is for every Hummingbird Ridge wine to be balanced and flavorful. We are open on Saturdays & Sundays from 11am to 6pm and our standard wine tastings are free of charge. We will also be open on Friday, December 9th & Friday, December 16th for Holiday shoppers. We have a nice variety of wine accessories and wine for the wine enthusiast on your gift list.

- HAPPY BIRTHDAY TO US!!! We are celebrating our 2nd year anniversary this coming weekend, December 3rd & 4th. Stop in and enjoy free food, wine tastings, and wine specials. - Recipe of the Month: Here is an easy and delicious recipe that is perfect for Holiday parties. We featured it at the Wine Just off the Vine wine trail event last month and everybody loved it, Hummingbird Ridge Winery Easy Ruby Meatballs Recipe


Ingredients: 1/4 cup Hummingbird Ridge Ruby Elixir wine; 1 can (14oz) jellied cranberry sauce; 1 bottle (12oz) chili sauce; 3/4 cup packed brown sugar; 1/2 tspn chili powder; 1/2 tspn ground cumin; 1/4 tspn cayenne pepper; 1 package (32oz) frozen fully cooked homestyle meatballs, thawed.


Instructions: Pour yourself a glass of Ruby Elixir wine. In a large saucepan over medium heat, combine the first 7 ingredients; stir until sugar is dissolved. Add meatballs; cook for 20-25 minutes or until hot, stirring occasionally. Makes about 6 dozen. Serve with Hummingbird Ridge Ruby Elixir. This sauce is also wonderful over chicken, pork, and meatloaf. Enjoy!!!

- Holiday Wine Tip for your Holiday Parties & Dinners: Since you will be serving a variety of people with a variety of food items, the best tip is to have a variety of wines available. For the person who only imbibes on the Holidays, a sweet red wine like Hummingbird Ridge Ruby Elixir is a perfect choice. For the experienced wine drinkers in the crowd, have a dry red wine like Hummingbird Ridge Red Reserve on hand. And for pairing with Holiday foods, Hummingbird Ridge Semi-dry Riesling goes great with seafood, while Hummingbird White is perfect with party appetizers. Two great wines to pair with Holiday dessert are Hummingbird Ridge Moonlight White and Pordevino, our hearty red port wine. Whatever you pour over the Holidays, all of us at Hummingbird Ridge Winery wish you all Happy Holidays!!!

We had some beautiful weekends in October  (except for the last snowy one) with the leaves showing their beautiful fall colors, and our 60's music party last month was cool, groovy, and far out with "The Happy Hippies" performing the hits of the 60's while the crowd enjoyed sipping on Hummingbird Ridge wine on the deck and the lawn. That will be our last lawn concert of the year, but we have had many requests for more music events, so we will continue them next Spring.

It is a glorious time of year and it is wine season everywhere! Be sure to stop by Hummingbird Ridge Winery for Free tastings of our New Releases.

- Port Wines are Back!!! Yes, our Red Port and White Port wines are now bottled and available for tasting and purchase. Port wines are wines that are fortified with Brandy. They are dessert wines but they are higher in alcohol than normal wines. Our winemakers have developed a method for crafting port wines that are extremely flavorful!

Our Red Port, Pordevino, is bursting with blueberry and cherry flavors and is more of a traditional style port. Our White Port, Pordeblanco, is one of the few white ports that we know of being made in the East coast. It is a truly unique taste experience with delicate citrus flavors of lemon and tangerine. You have to taste it to believe it! Come on in and taste both of these premium ports and give your taste buds a treat.

- Upcoming Mason Dixon Wine Trail Event:
Sample the New Wine Releases of the 13 wineries of the Mason Dixon Wine Trail (formerly Uncork York Wine Trail), including Hummingbird Ridge Winery. - We are in the process of completing our new Production Facility, which will be designed to allow us to increase wine production and add new wines to our wine lineup and also allow us to increase our Tasting Room space. - Recipe of the Month: Here is an easy and delicious recipe that is perfect for your Holiday parties and dinners. We featured it at our Wine & Cheese Tasting & Seminar last month, Gorgonzola & Walnut Stuffed Mushrooms:  Ingredients: 1 cup crumbled Gorgonzola cheese; 1/4 cup Panko crumbs; 1/4 cup Heluva Good French Onion Dip; 1/4 cup chopped walnuts; 1 Tblsp. minced garlic; 16 medium mushroom caps. Preheat oven to Bake at 350 degrees. Mix together the first 5 ingredients. Wash mushrooms, Take mushroom stems out and discard the stems. Stuff the mushroom caps with the mixture and bake on a cookie sheet until mushrooms are soft and the cheese is brown, about 10-15 minutes. Serve with Hummingbird Ridge Red Reserve. Enjoy!!!

- In last months newsletter, we mourned the passing of Cathy (Cat) Towers, co-owner of the Silver Lake Inn and an avid supporter of Hummingbird Ridge Winery. It is with great sadness that we also mourn the passing of her husband and co-owner of the Silver Lake Inn, Rex Towers. Both of them battled serious health issues, but they supported Hummingbird Ridge Winery from the beginning. We will miss them both greatly, but we are consoled in the fact that they are together again.

The "monsoons" of Summer have hopefully left us now and the cool breezes of Autumn will hopefully dry us out. The leaves are starting to put on their annual colorful show and the grape harvest is in progress. It is a glorious time of year and it is wine season everywhere! - We would like to Thank everyone who came out to the 2nd Annual "Put a Cork in It" Wine & Dine Benefit for Relay for Life/American Cancer Society at Hummingbird Ridge on Sept. 30th and Oct. 1st. All enjoyed 4 delicious courses perfectly paired with 4 wines, along with Sangria and Warm Cider Wine.

- Upcoming Events:

October 15, 1-4pm; Hummingbird Ridge Winery presents free live music with an 60's Music Tribute by "The Happy Hippies". Wear your tie dye and come out and enjoy all the 60's songs that you know and love, and enjoy Hummingbird Ridge wine by the glass or bottle! Free Admission. Bring lawn chairs. Non-Hummingbird Ridge alcohol is not permitted on winery premises.

- October 28, Wine and Cheese Tasting and Seminar, featuring 5 courses Cheese Dishes (featuring Premium Cheeses from around the World) paired with 5 different Hummingbird Ridge Winery wines. Participants will also experience a series of fun exercises and seminars designed to test and enhance their wine knowledge, aromatic and taste senses, and winemaking knowledge.

- New Releases: Attention all of you Ruby Elixir and Moonlight White fans- They Are Back!!! Yes, our best-selling sweet red wine Ruby Elixir is back and available for tasting and purchase. Also, more of our Moonlight White, which won a Silver medal at this year's Finger Lakes wine competition in the Vidal Blanc category is bottled and available for tasting and purchasing. Stop in and taste these 2 Delicious wines!

- By Mid-October, you will notice a new building on the winery premises. This will be our new Production Facility, which will be designed to allow us to increase wine production and add new wines to our wine lineup and also allow us to increase our Tasting Room space. We look forward to producing more quality wines for you with our new facility!

- As many of you know, the Uncork York Wine Trail, of which we are a member, has been going through some changes, including a name change and the addition of more wineries. The new wine trail was officially announced last month at a media event. The new name is The Mason Dixon Wine Trail and it will now include some Maryland wineries, as well as Pennsylvania wineries. - Recipe of the Month: Gourmet Toasted Cheese Sandwiches- Here is a simple way to take Toasted Cheese Sandwiches to a whole new level. We featured these at our last Wine & Cheese event and they were a big hit. Ingredients: Slices of your favorite bread, Brie cheese, 2 Granny Smith apples (cored peeled and sliced). Butter the backs of the bread, place several slices of Brie cheese and several slices of apple on the dry inside of the bread. Toast until cheese is melted and outside of bread is golden brown. Serve with Hummingbird Ridge Semi-dry Riesling and Enjoy!!!

- Hummingbird Ridge Winery is mourning the passing of Cathy (Cat) Towers, co-owner of the Silver Lake Inn and an avid supporter of the winery. Cat was a great friend to the winery and she wanted Silver Lake Inn to be the first restaurant to carry our wines. She believed in us before we believed in ourselves and we miss her greatly. We raise a toast to you, Cat!
