Well, 2010 is history and we want to Thank all of you once again for supporting Hummingbird Ridge Winery and making our first year successful!!! 2011 is here and we are focused on providing you with the best, most flavorful wines available. Our motto is “Experience The Flavor” and our goal is for every Hummingbird Ridge wine to be balanced and flavorful. We have been upgrading our bottling equipment so that we can increase production and keep up with the demand for our wines that sold out in 2011. Our plans for 2011 include many upgrades for the winery and participating in more off-site events and wine festivals.

We will continue to be open on Saturdays and Sundays from 11am to 6pm and our standard wine tastings will continue to be free of charge. If you belong to a group, club or association and you would like a Private Wine Tasting for your group during the week or weekend, please call us at 717-315-0209 for availability. We hope to see you soon at the winery and we wish you all a Happy, Successful, and Prosperous 2011!!!

- We sold out of several wines last month, including Ruby Elixir and Pordevino, but we have more of everything in the tanks and getting ready for bottling. We are a microwinery and we make our wines in small batches so that we can focus on every detail of the winemaking process. So at times we will sell out of certain wines. January is Winter Winederland month at the winery with lots of new wine releases and here is the current wine lineup and projected release dates for wines in the tanks:
Hummingbird Red, our full-flavored dry red: Available for tasting with a good supply in stock.

Red Reserve, our full-bodied Cabernet Sauvignon: Bottled and will be released for sale this month.

Semi-Dry Riesling, our crisp semi-dry white with bright citrus tones: Available for tasting with a good supply in stock.

Hummingbird White, our soft and elegant semi-dry white: Available for tasting with a good supply in stock.

Sweet Dreams, our sweet and flavorful Niagara: Available for tasting with a good supply in stock.

Ruby Elixir, our semi-sweet best-selling red: Sold out but more scheduled to be bottled within the next 4-6 weeks.

Shimmer, our sweet white with hints of pineapple and tropical tones: Sold out in 2 months last year, but more is now bottled and will be released within the next 2 weeks. We already have many case pre-orders for this wine, so we expect it to sell out quickly again this year.

Moonlight White, our semi-sweet Vidal Blanc: Sold out quickly last year, but more is in the tanks and scheduled to be bottled this month.

Wildflower White, our semi-sweet white with layers of flavor: Bottled and will be released for sale this month.

Pordeblanco, our port-style white wine, a unique flavor sensation: Available for tasting with a good supply in stock.

Blue Diamond, our port-style blush wine, yep we said blush port: Currently sold out but more scheduled to be bottled within the next 4 weeks.

Cork Wreath, Look online for instructions. 3. If you do scrapbooking, you can carve your own stamps into corks. 4. Cork Tabletop, Look online for instructions. 5. Fishing Bobber, put a staple in the cork and pull the staple back out a little bit & put your line through. 6. Pin Cushion 7. Glue thin slices of cork on the bottom of tables, chairs, pottery, etc. so they don't scratch the floor or other surfaces. 8. If you've lost the cap to a soda bottle, use a cork. 9. Cork and Bead necklaces or curtains, Drill holes in corks and string beads through the corks. 10. Door Stop 11. Trivet (Pot Holder), slice corks in half & frame with wood for a place to put hot pans. 12. Put small pieces of cork over the ends of knitting needles, fishing hooks, or any sharp object to protect it and you. 13. To decorate a potted plant, lay corks on top of the level potting soil in patterns. 14. Wrap a cork with sandpaper for a Sanding Block for small sanding jobs. 15. Key Ring for boaters, if your keys go overboard, the cork floats. 16. Wall Border 17. Fill holes in floors left by previous tenants. So go and put your used corks to good use!

- Recipe of the Month: With the winter freeze nipping again, here’s a recipe to beat the cold, especially while you are making it:

Super Tender Beef Tenderloin: Ingredients: 6 cloves garlic, peeled & slivered; 1 cup soy sauce; 1/4 cup olive oil; 1/2 teaspoon hot pepper sauce; 1 cup (plus 2 glasses for the cook and some for your guests) Hummingbird Ridge Pordevino port wine; 1 teaspoon black pepper; 1 teaspoon dried thyme; 1 bay leaf; 5 lbs beef tenderloin

Directions: Pour a glass of Hummingbird Ridge Pordevino port wine for the cook. Take a sip of port. Make small slits in the tenderloin and insert the garlic slivers; set aside. In a large bowl, (or a Reynolds turkey oven bag for easy clean-up and marinating) combine all of the remaining ingredients; mix well. Take a sip of port. Add tenderloin. Take a sip of port. Cover and marinate the tenderloin OVERNIGHT & finish the glass of port.

The next day, Preheat oven to 425 degrees. Pour a glass of Hummingbird Ridge Pordevino port wine for the cook. Take a sip of port. Coat a roasting pan with non-stick cooking spray. Take a sip of port. Remove the meat from the marinade and place on a rack like broiler pan. Folding the ends under roast so tenderloin is of uniform size. Discard the marinade. Take a sip of port. Roast the tenderloin for 45-55 minutes for medium- rare or to desired doneness (watch carefully- oven temperatures can vary). Take a sip of port. Allow to sit for 15 minutes before slicing crosswise to serve. Serve with Hummingbird Ridge Pordevino port wine. Enjoy!!!

- Winemaking Term of the Month: Rack: To draw off from the lees or sediment, the term has its roots in Biblical times from the word raca meaning “worthless” or lowest parts. When winemakers say they are going to “rack” the wine, they don’t mean that they are going to put the wine in a wine rack or that they are going to torture the wine, they mean that they are going to carefully siphon or pump the wine to separate the sediment at the bottom of the tank created from the fermentation and clarification process from the clearer wine above the sediment. The racking process normally begins after fermentation is complete and the wine is racked at periodic intervals until clarified to the winemakers liking.

- We are proud to announce that the following Central PA eateries are now carrying Hummingbird Ridge wines:
Silver Lake Inn, Lewisberry
Back Woods Grill, Etters

- Wine Question of the Month: Why is wine with little or no sugar content called “dry wine”? We get asked this question a lot at the tasting room and the origin of the term “dry wine” is unfortunately, not easy to explain. In researching the question, the best answer that we can find is the following from a Word Origins Discussion Board: "In medieval times (and pretty much up to the advent of modern winemaking), wines were typically drank young, since it was difficult to keep them from spoiling. Any aging that was done would have been done in wooden barrels, since the bottle- and cork-making techniques of the time weren't good enough to permit long-term storage in the bottle. (The ancient Romans and Greeks had airtight containers for storage, but these methods were lost during the dark ages.) So although it's possible to age the astringency out of modern wines, in medieval times there would have been a tradeoff between sweetness and astringency. As a general rule, non-sweet wines would have been more astringent ('dry' in the mouth) and sweet wines less so. From this, it's not surprising that 'sweet' and 'dry' would have come to be regarded as opposites in wine, and that non-sweet wines would continue to be called 'dry' even when improved methods of winemaking led to the production of non-sweet wines that weren't particularly astringent.
- Please note the following Holiday tasting room hours: Hummingbird Ridge Winery will be Closed on Christmas Day, Dec. 25th, Dec. 26th, New Years Day Jan.1st, & Jan.2nd.

We will be Open on Friday, Dec. 31st from 1pm to 5pm for your New Year’s Eve wine purchases.

- Also continuing this month at the winery, Camp Hill wildlife photographer Melissa Earnshaw will be exhibiting her amazing artwork. If you are a fan of wolves (her specialty) or other wildlife, come and see her spectacular photographs!

- Recipe of the Month: This month’s recipe celebrates Autumn and is for all of you dessert-lovers out there. This Pumpkin Bundt Cake is so moist and delicious, you won’t be able to stop at just one piece:
Ingredients:
1 cup vegetable oil or Canola Oil, 3 eggs, 1 can (15-oz. size) pumpkin, 1 teaspoon vanilla extract, 2 cups white sugar, 2 1/2 cups all purpose flour, 1 teaspoon baking soda, 1 teaspoon ground nutmeg, 1 teaspoon ground allspice, 1 teaspoon ground cinnamon, 1 teaspoon ground cloves, 1/2 teaspoon salt, 1/2 cup chopped nuts (0ptional)

Directions: Preheat oven to 350 degrees. Grease one 10 inch Bundt or tube pan. Cream oil, beaten eggs, pumpkin and vanilla together.

Sift the flour, sugar, baking soda, ground nutmeg, ground allspice, ground cinnamon, ground cloves and salt together. Add the flour mixture to the pumpkin mixture and mix until just combined. If desired, stir in some chopped nuts. Pour batter into the prepared pan.

Bake at 350degrees for 1 hour or until a toothpick inserted in the middle comes out clean. Let cake cool in pan for 5 minutes then turn out onto a plate. Let cool and dust with powdered sugar. (Or, frost with cream cheese frosting or a powdered sugar glaze). This goes great with Hummingbird Ridge “Sweet Dreams” wine. ENJOY!!!

- Winetasting Tip of the Month: If you can never seem to find a dry red wine that you like, maybe you are not giving your reds enough of a chance to show themselves at their best. Remember that many red wines need to be exposed to air and allowed to “breathe” a bit before they become their best, especially if they are newer vintages. Just letting the wine sit in your glass (or decanting the wine into a decanter or glass pitcher) for as little as 30 minutes allows the alcohol aromas to “blow off” and also starts a reaction that softens and smooths the tannins and “unwinds” the tightly bound flavors in red wines. So give your red wine a chance to show itself at its best and “let it breathe”!

- It's often hard to pair Holiday meals such as Thanksgiving with wine, not just because of the variety of foods presented, but also because of the variety of people at the table. Trying to please a variety of people can be hard, but here is a possible solution. Present several wines at the table in different styles that guests can choose from. A nice sparkling wine is always nice, as well as a fruit-forward dry red, and perhaps a semi-dry white and of course, a sweet wine for those that are not big wine drinkers. Fortunately, Hummingbird Ridge Winery is your one-stop shop for Thanksgiving wines. From our Hummingbird Red & Semi-Dry Riesling on the drier side to our Sweet Dreams & Ruby Elixir on the sweeter side, you can present your guests with the perfect wine for your Thanksgiving celebration. Stop in our tasting room for more advice on pairing wines with Thanksgiving dinner or any meal.

- As our winery team prepares to celebrate Hummingbird Ridge Winery's first Thanksgiving, we wish you and yours a Great Thanksgiving with family and friends!!!

- Make sure to look for our New Billboard on Interstate 83 southbound, just after the Lewisberry Exit. We hope to see a lot of new visitors coming off of I-83!

- Remember, we also sell wine by the glass. Stop by and relax with a glass of wine!

After several months off the shelves, Ruby is Back! For those new to Ruby, it is our playful red wine that begs to be taken to a party or anywhere there are good times and good friends. Stop in and have a taste.

- Also this month at the winery, wildlife photographer Melissa Earnshaw will be exhibiting her stunning photography. Stop by and see this fabulous exhibit!

- Recipe of the Month: This month's Recipe is a simple but flavorful way to prepare chicken - Garlic Riesling Chicken. 1 1/4 pounds skinless boneless chicken thighs (salt & pepper to taste), 1 Tblspn olive oil, 1 head garlic (cloves separated & peeled), 1/2 cup Hummingbird Ridge Semi-dry Riesling, 1/2 cup chicken broth

Season chicken with salt and pepper; In a large skillet over medium-high heat, heat oil; Add chicken thighs and brown on all sides, about 10 minutes. Place chicken in a slow cooker and add remaining ingredients. Cook on medium setting for 3.5 hours. Serve chicken with the garlic Riesling broth. Pair this with, of course, Hummingbird Ridge Semi-Dry Riesling. Enjoy!!!

- Winetasting Tip of the Month: We have had some questions from newer wine drinkers about reviewing the standard process for tasting wines in a critical manor. The following steps will allow you to critically evaluate wine:
Sight - hold the wine up to light, examine for clarity, brilliance, and depth of color; should not be cloudy; most commercial wines are filtered; white wines gain color as they age, red wines lose color and “brown” as they age.
Swirl - swirl the glass to expose wine to a larger surface area and release aromas. Smell - smell the wine; put your nose into the glass & inhale slowly and deeply; note the aromas; swirl again and smell again before drinking; wine flaw odors include Sulfur, Chemical, or Musty smells. Cork taint is a wet newspaper or musty smell.
Slurp - slurp some wine into your mouth, which aerates the wine and breaks up the molecules allowing the flavors and more aromas to be released.
Swish - swish the wine around in your mouth and allow the wine to coat every part of your mouth, and BEFORE you swallow the wine, close your eyes, focus your concentration on what you are tasting and note the flavors, sweetness, acidity, tartness, softness of the mouthfeel, and tannins (if it's a red wine). Is the wine light bodied or full-bodied (light or heavy on the tongue). Also note any unpleasant tastes.
Swallow - note the length of the finish (how long does the taste remain after you swallow).
Savor - think about your overall impression of the wine, were the components balanced, were there any "off 'tastes", would you drink this wine again, write notes.

- Many of you have suggested that we have more signs out so that people know where we are located. Well, we have listened to your suggestions and Hummingbird Ridge Winery will soon be on a billboard located along Interstate 83 Southbound, just after the Lewisberry Exit. Now that’s a Big Sign!

- Remember, we also sell wine by the glass. Stop by and relax in our Hummingbird Garden area with a glass of wine!

- Also, Be sure to ask for Hummingbird Ridge wines at the following fine York County eateries:
Silver Lake Inn, Lewisberry

Back Woods Grill, Etters

- Hummingbird Ridge Winery had some nice press recently with an article in the Harrisburg Patriot News:

"Tom Day, the winemaker who opened Hummingbird Ridge Winery in December, said some people are intimidated by wine. He thinks that's too bad. Day said he wants all sorts of people to enjoy wine, and he makes wines that appeal to the palates of the people living in the area. A lot folks who don't think they're wine people visit his winery, taste the wine and buy it.

Hummingbird Ridge wine is served at restaurants such as the Silver Lake Inn in Lewisberry, Culhane's Steak House in Fairview Twp. and Two Brothers Italian Grill in Newberry Twp (and Back Woods Grill in Etters & Hillside Cafe in Fairview Twp. -ed.)

All of which is quite an accomplishment for a vintner who put out his shingle only a few months ago. - Recipe of the Month: This month's Recipe is Hummingbird Cake (No, it's not made with hummingbirds). The origin of this moist and delicious cake is a mystery but, according to Southern Living magazine, the first appearance of this recipe was in it's magazine as submitted by a reader in 1978. This cake pairs well with our 2 new port-style wines, "PORDEVINO" & "PORDEBLANCO". Enjoy!!!

"Hummingbird Cake"

3 cups all-pupose flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 eggs, beaten
1 1/2 cups cooking oil
1 1/2 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple, undrained
2 cups chopped pecans or walnuts, divided
2 cups chopped bananas

Combine dry ingredients in a large mixing bowl; add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup chopped pecans, and bananas. Spoon batter into a well-greased 9-inch cakepan. Bake at 350 degrees F. For 25 to 30 minutes.
And as your guests are eating up every last crumb, remember to tell them that "No hummingbirds were harmed in the making of this cake".

- Winetasting Tip of the Month: Here’s a simple little trick that will help you to focus your sense of smell and taste while you are tasting wines. It is important to focus your senses because experts say that up to 80% of what we taste is actually derived from our sense of smell. After you swirl and sniff and take a sip of the wine and use the "slurp method" we detailed in last month's newsletter, close your eyes and focus on the aroma and taste. Closing off your sense of sight will open up your other senses and help you to focus more intensely. Just don’t lose your balance and fall over.
