The saying "April showers bring May flowers" was never more appropriate than this year, with record-setting amounts of precipitation last month in Central PA. Thank You to all of you who braved the storms to come to Hummingbird Ridge Winery. Hopefully, warm and sunny weather will greet the hummingbirds as they arrive in Central PA. - The April rains slowed down construction of our new Wine Deck, but our contractor tells us that it should be done soon, as long as the weather cooperates. So be sure to stop out in a few weeks and enjoy a glass of wine on the new deck!
- In case you haven't heard yet, Hummingbird Ridge Winery has won a Silver Medal with their very first entry into an International Wine Competition. Hummingbird Ridge Winery's Moonlight White, made from the Vidal Blanc grape, won a Silver medal last month at the Finger Lakes International Wine Competition. Moonlight White was judged along with over 3200 wines from 19 countries.
Tom Day, owner of Hummingbird Ridge Winery, stated "This really validates our small batch process and our attention to detail through every step of the winemaking process. It is great that professional wine judges deem Hummingbird Ridge wine to be worthy of a medal." The first bottling of Moonlight White sold out quickly after news of the Silver medal got out, but there is more in the tanks and we will be bottling more very soon.
- We are a microwinery and we make our wines in small batches so that we can focus on every detail of the winemaking process. So at times we will sell out of certain wines. Here is the current wine lineup in the tasting room for May:

- Tip and Recipe of the Month: The tip this month ties in with this month's recipe. For those of us who are sensitive to onions when we are cutting them, there was an article recently that listed ways to reduce the tear-inducing fumes produced when cutting onions: 1. Use a sharp knife and work quickly 2) Cut near an open flame: The flame sucks in air and therefore pulls the gas away from your eyes. 3) Chill or Freeze the onion for 15 -30 minutes before cutting 4) Spritz the cutting board with vinegar before cutting 5) Cut the onions underwater 6) Use a Fan to blow the onion fumes away from you 7) Wet your hands with water or vinegar before cutting 8) Use plastic Safety Goggles 9) Cover the chopped onion as you cut the rest of the onion 10) Chew gum or bread 11) If you have contact lens, wear them 12) Breathe through your mouth, not through your nose 13) Rinse the cut portions immediately after slicing onion in half and keep onion halves face down.
Grilling season is upon us and Caramelized Onions make a great addition to grilled meats. Here is a great way to make perfect Caramelized Onions every time: Caramelizing significantly reduces the volume of the onions so even if you start out with a pan full of raw onion, they will cook down substantially. For most purposes, one onion per person serves as a good rule of thumb. A heavy non-stick or well-seasoned iron skillet is best. Get sweet yellow or white onions. After cleaning the onion of the skin and the root and stem tips, cut the onions in half, top to bottom. Then slice the onions, flat side down, to make thin strips of onion. Make sure to separate the layers.
Pour enough olive oil (or olive oil and butter) to coat the bottom of the skillet plus about a tablespoon more (about 1 teaspoon per onion). Heat the skillet on high until the oil is very hot but not smoking. Add the onion slices and stir to coat the onions with the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally. After 10 minutes, sprinkle some salt over the onions, and if you want, you can add some sugar to help with the caramelization process. (add about a teaspoon of sugar for 5 onions. You will need to watch it very closely throughout the cooking to ensure the sugar does not burn.)
Let cook for 30 minutes to an hour more, stirring every few minutes. As soon as the onions start sticking to the pan, let them stick a little and brown, but then stir them before they burn. The trick is to let them alone enough to brown (if you stir them too often, they won't brown), but not so long so that they burn. After the first 20 to 30 minutes you may want to lower the stove temperature a little, and add a little more oil if you find the onions are verging on burning. A metal spatula will help you scrape up the browned bits from the bottom of the pan as the caramelization proceeds. As the onions cook down, you may find you need to scrape the pan every minute, instead of every few minutes.
Continue to cook and scrape, cook and scrape, until the onions are a rich, browned color. At the end of the cooking process, add 3 to 4 Tablespoons of white wine (Hummingbird White works perfect for this) to help deglaze the pan and bring some additional flavor to the onions. Salt and pepper to taste. Optional ingredients- add any of the following for flavor: Add soy sauce, Bacon pieces, cooked apples or pears, fresh herbs, or cheese. Any extra Caramelized Onions can be sealed in a freezer bag and frozen, then microwave or reheated in skillet when ready to use. Use these to add flavor to pizza's, sandwiches, omelet's, fajitas, with fried, mashed or baked potatoes, added to mac and cheese or just on their own. However you enjoy them, make sure to serve them with Hummingbird Ridge wine. Enjoy!!!

- This Exciting News Just In!!!!! Central Pennsylvania's Hummingbird Ridge Winery has won a Silver Medal with their very first entry into an International Wine Competition. Hummingbird Ridge Winery's Moonlight White, made from the Vidal Blanc grape, won a Silver medal last weekend at the Finger Lakes International Wine Competition. - Our new deck is currently under construction and should be completed by the end of April. We will be announcing our Deck Opening Celebration very soon! Soon you will be able to stop in and enjoy a glass or bottle of wine on the deck while you watch for hummingbirds at the feeders.
- Recipe of the Month: Cog Au Vin Blanc (Chicken Vegetable Stew with White Wine) This was such a hit during the Tour de Tanks last month and we had so many requests for the recipe that we decided to feature the recipe this month:
Ingredients: 3 Chicken Breasts (with bone) with skin on; 4 Tablespoons Butter; 1 onion diced; 4 celery ribs diced; 3 Tablespoons chicken base or to taste; 3 quarts water; 2 bags frozen mixed vegetables; 1 box of small sized pasta; 3 small cans of tomato soup; 2 cups of Hummingbird White wine
Directions- Boil chicken until cooked. Pick the chicken off the bone. Set aside and let cool. In a soup pot, saute onion and celery in butter until soft. Add 3 quarts of water and chicken base. Bring to a boil. Add 2 bags of frozen mixed vegetables and the box of pasta. Add the tomato soup, the chicken pieces, and the wine. Salt and pepper to taste. Simmer for 20 minutes.
Since Hummingbird White is used in the recipe, it's only natural to enjoy a glass of Hummingbird White with this stew. Enjoy!!!

Well, winter continues to "delight" us with its cold temps and frozen precipitation. But February is here and we can almost see the end of winter in sight. Thankfully, visitors continue to brave the winter conditions and visit our tasting room to taste our new wine releases. We are a microwinery and we make our wines in small batches so that we can focus on every detail of the winemaking process. Here is the current wine lineup and projected release times for wines in the tanks:
Hummingbird Red, our full-flavored dry red: Available for tasting with plenty in stock.
Reserve Red, our full bodied red with ripe berry tones that leads into a seriously long finish: Just released with a good supply in stock.
Semi-Dry Riesling, our crisp semi-dry white with bright citrus tones: Available for tasting, but supplies are low and we expect it to be sold out by the end of February. New vintage not scheduled to be bottled until May. Get it while you can!
Hummingbird White, our soft and elegant semi-dry white: Available for tasting with a good supply in stock.
Sweet Dreams, our sweet and flavorful Niagara: Available for tasting with a good supply in stock.
Ruby Elixir, our semi-sweet best-selling red: Sold out, but more scheduled to be bottled in 2 weeks and released by the end February.
Shimmer, our sweet white with hints of pineapple & tropical tones: Available now and selling quickly. Sold out in 2 months last year and it is selling just as fast this year!
Moonlight White, our semi-sweet Vidal Blanc: Just bottled and will be released within the next 2 weeks.
Adams Apple, our newest apple wine creation made with a tasty blend of 5 types of apples: Just bottled and scheduled to be released within the next 2 weeks.
Pordeblanco, one of the few white ports on the East coast with dazzling tangerine and citrus flavors. Limited supply.
Pordevino, our red port with berry flavors to the max. Limited supply
Blue Diamond, our truly unique blush port with flavors that dance across your tongue leaving you wanting more and more. Scheduled to be bottled within the next 4 weeks.

- Recipe of the Month: Wine and Chocolate Cupcakes
Ingredients
3 cups all purpose flour
2 cups granulated sugar
1 Tbs baking powder
1/2 tsp salt
1/2 cup unsweetened cocoa powder
6 eggs
1 1/2 cups Hummingbird Ridge Pordevino, Reserve Red, or Hummingbird Red wine
2 tsp vanilla extract
1/2 cup vegetable oil
1 cup dark chocolate chips (melted)
Directions
1. Preheat oven to 325ยบ F.
2. Line 2 cupcake pans. (Tip: After you line the pans, spray the liners with some non-stick spray. It will keep the cupcakes from sticking to the paper.
3. In a large mixing bowl sift together the flour, sugar, baking powder, salt and cocoa powder. Mix everything so that it is evenly distributed.
4. Make a well in the center of the dry ingredients.
5. Into the well, pour in the wine, vanilla, oil and eggs.
6. Mix on low speed until combined and lump free.
7. Pour in the melted chocolate chips and mix until thoroughly combined.
8. Fill lined cupcake pan. Fill each liner to the top.
9. Bake for 20 to 25 minutes. The cupcakes will puff quite a bit, and when done should be slightly firm to the touch, but be able to spring back.
10. Let cool slightly before dipping in chocolate wine topping.
Chocolate Wine topping
This makes a lot, but the leftovers can be used as a topping for ice cream and other sweet treats.
Ingredients
2 1/2 cups dark chocolate chips
1 14oz. can sweetened condensed milk
1/2 cup red wine (same as used in the cupcakes)
1/2 cup karo syrup
4 tsp balsamic vinegar
Directions
1. Microwave everything in a microwave safe bowl for two minutes.
2. Remove from microwave, carefully, and stir until smooth and shiny.
3. Let cool, and dip cupcake tops into the chocolate.
4. Repeat after they've set up a bit
- Wine Tip of the Month: When pairing wine with chocolate, typically the wine should be at least as sweet, if not a touch sweeter, than the chocolate you are serving it with. Otherwise, the taste may quickly veer towards bitter or sour.
When pairing wines with chocolate, your best bet is to match lighter, more elegant flavored chocolates with lighter-bodied wines; likewise, the stronger the chocolate, the more full-bodied the wine should be.
Similar to a formal wine tasting, if you will be experimenting with several varieties of chocolates, work from light to dark. Start with a more subtle white chocolate and end on a dark or bittersweet chocolate.
White chocolate tends to be more sweet, mellow and buttery in flavor and generally pairs well with sweet white wines. Milk Chocolate generally pairs well with semi-dry reds and some whites, and Dark chocolate generally pairs well with Dry reds and Port wines. But these are just general suggestions. Dare to be bold and experiment. You will find that the perfect wine and chocolate pairings bring out the best in both the wine and the chocolate!
